  • Pour your Rice Chex cereal into a large mixing bowl and set aside.
  • In a medium saucepan over medium-low heat, combine mini marshmallows, chocolate chips, peanut butter, and butter.
  • Stir until the marshmallows are completely melted and the mixture is thick and glossy.
  • Immediately pour the mixture over the Rice Chex cereal. Gently fold everything together with a spatula until the cereal is evenly coated, being careful not to crush it too much.
  • Transfer the coated cereal into an 8×8-inch baking dish lined with parchment paper, leaving a slight overhang. Press the mixture into an even layer using a spatula.
  • Dust the top with ¼ cup powdered sugar, then refrigerate for at least 1 hour, or until firm. 
  • Use the parchment paper overhang to remove the bars from the pan, then slice into equal sized squares for serving!

My top tips:

  • CEREAL: Puppy Chow Bars can be made with a variety of Chex cereals. Corn Chex or even Wheat Chex can work, but Rice Chex is popular for a lighter, crisp texture. I suggest using Rice Chex.
  • DON’T OVERHEAT THE CHOCOLATE: Melt the marshmallow, chocolate and peanut butter mixture gently, stirring often, to keep the mixture smooth and prevent burning. You don’t want to cook it for too long, just until melted.
  • MIX QUICKLY: Once the chocolate mixture is melted, you’ll need to move quickly to coat the cereal mixture before it begins to cool and set up. I like using a rubber spatula to mix, as this avoids crushing the cereal too much.
  • LINE YOUR PAN: Use parchment paper with a little overhang so the bars lift out easily for clean slicing.
  • PRESS GENTLY: When transferring the mixture to the pan, press it in lightly. Packing it too tightly can make the bars hard instead of chewy.
  • LET THEM COOL: Chill the bars for at least one hour before cutting to help them hold their shape.I find it helpful to use a sharp knife to cut these and wipe the knife clean between cuts for neat, bakery-style squares.
  • POWDERED SUGAR FINISH: For a light coating, dust the tops with a little extra powdered sugar just before serving. If you want the full classic Puppy Chow experience, cut the bars into squares and coat each one completely in powdered sugar.
  • STORING: Keep the bars in an airtight container at room temperature for up to 4 days, or refrigerate for up to a week if your kitchen is warm. You can also freeze these for later by wrapping individual bars and freezing for up to 2 months. Thaw at room temperature for 20–30 minutes before serving.
