Ingredients you’ll need:

How to make the best Buckeye Marshmallows:

  • Insert a toothpick into each marshmallow and place them upright on a sheet pan lined with parchment paper or a silicone mat, then set aside.
  • In a microwave safe bowl, combine the white chocolate chips and peanut butter. Microwave in 30 second intervals, stirring in-between until melted and smooth.
  • Dip each marshmallow into the melted chocolate and peanut butter, let any excess drip off, then return to the prepared baking sheet and transfer to the fridge for 30 minutes to set.
  • In another microwave safe bowl, combine chocolate chips and vegetable oil. Microwave in 30 second intervals, stirring in-between until the chocolate is melted and smooth.
  • Dip each peanut butter coated marshmallow ¾ of the way into the melted chocolate, let the excess drip off, then return to the prepared baking sheet and transfer to the fridge for 30 minutes to set the chocolate.
  • Optionally remove all toothpicks before enjoying them! Tip: if you want to cover the toothpick holes, rub your fingertip in a small circular motion over the hole to blend the peanut butter seamlessly until the hole disappears.

My top tips:

  • MELTING CHOCOLATE: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. I also like adding vegetable oil to the chocolate to thin it out a little and make it a better consistency for dipping. You could use coconut oil for a similar result.
  • COATING: After you coat each marshmallow, tap it against the bowl so the excess chocolate drips off. You’ll also want to scrape all the excess chocolate off the bottom so that it won’t create a pool or “foot” of chocolate once placed onto the baking sheet.
  • CHILLING: Chilling your Buckeye Marshmallows between dipping prevents the peanut butter layer from mixing with your warm chocolate. They only need to chill for about 30 minutes but this step is very important! 
  • TOOTHPICK HOLES: You can enjoy these with or without the toothpicks. If you choose to remove the toothpicks, you can easily cover the toothpick holes by rubbing  your fingertip in a small circular motion over each hole to blend the peanut butter seamlessly until the hole disappears. 
  • STORING: You can store these buckeye-style chocolate-covered marshmallows in an airtight container in the refrigerator for up to 1 week. Separate layers with parchment paper so they do not stick. For long-term storage, freeze them for up to 2 months, then thaw them on the counter for 30 minutes before enjoying.
