Ingredients you’ll need:
- Ritz crackers
- Marshmallow fluff
- Creamy peanut butter
- Semi-sweet chocolate
- Vegetable oil
I love a recipe that looks impressive but barely requires any effort to make and these fluffernutter Ritz cookies are just that! Flakey and buttery Ritz crackers act as the “cookies” to these fluffernutter stuffed sandwich cookies and are the perfect time saving shortcut!
How to make the best fluffernutter Ritz cookies:
- Spread 1 tsp of marshmallow fluff onto half the Ritz crackers, then spread 1 tsp peanut butter onto the remaining crackers.
- Working one by one, sandwich one marshmallow fluff cracker and one peanut butter cracker together. Repeat with remaining crackers.
- Place them on a baking sheet lined with parchment paper or a silicone mat, then transfer to the freezer for 20-30 minutes.
- In a microwave safe bowl, combine semi-sweet chocolate and vegetable oil. Microwave in 30 second intervals, stirring in-between until melted and smooth.
- Dip each cracker sandwich halfway into the melted chocolate, then place back onto the lined baking sheet.
- Transfer the baking sheet to the fridge or freezer to let the chocolate harden before enjoying.
Simple enough to whip up day of or make in advance! To make them even better, they’re easily portable when you want to share! This recipe can easily be doubled or tripled to feed a crowd.

My top tips:
- I like using an offset spatula to spread the marshmallow fluff and peanut butter onto the crackers, but you can also use the back of a spoon, a knife, or even a piping bag if you want to be super neat with it.
- Try your best to not overfill the crackers. You’ll only need 1 tsp of marshmallow fluff and 1 tsp of peanut butter per cracker. If you overfill them, the filling will just seep out the edges of the cracker and become a big mess!
- I recommend freezing the filled crackers before dipping them in the melted chocolate. This firms up the filling and helps them hold their shape while being dipped into the chocolate.
- Adding a little vegetable oil to the chocolate is my secret trick for silky smooth chocolate every time! The vegetable oil thins out the chocolate a little and makes it much easier to dip the crackers.
- I find that dipping the sandwich cookies only halfway into the chocolate is the perfect amount of chocolate to not overpower the peanut butter and marshmallow flavor. But, if you’re a chocoholic, feel free to coat the crackers completely!
- I like storing any leftovers in an airtight container or Ziploc bag in the fridge. This keeps the crackers extra crunchy and fresh for weeks!
