Strawberry Shortcake Dip is a twist on the classic strawberry shortcake ice cream bars we all know and love. I took all the iconic flavors of the popular ice cream bars – sweet strawberry, creamy vanilla, and strawberry crunch topping – and turned them into a dip!

If you’re like me, you can remember the excitement of ripping open a Good Humor strawberry shortcake ice cream bar and biting into that creamy vanilla with strawberry crunch crumbles. It’s a core childhood memory!

Now, I’ve turned a favorite ice cream bar into one of my favorite dessert dips! This delicious treat is perfect for any season and any occasion, from birthdays to casual get-togethers, and sometimes just because your family needs a special treat. Plus, the recipe is so easy to follow, you’ll be able to make this dip in no time.

Ingredients you’ll need:

  • Golden Oreos
  • Strawberry Jell-O mix
  • Butter- melted
  • Cream cheese- softened
  • Marshmallow fluff
  • Frozen whipped topping- thawed

Strawberry Shortcake Dip is a creamy, crunchy, no-bake dessert dip with all the flavors of cheesecake – in a fraction of the time! A fluffy, whipped cream cheese filling is topped with strawberry crunch and served with graham crackers.

Please tell me you remember (or still enjoy) those strawberry shortcake ice cream bars – the ones with the strawberry center, wrapped in ice cream and then coated in a crunchy strawberry topping. This ice cream bar has always been a favorite treat of mine, so I wanted to turn it into a strawberry crunch dip. Best decision ever! 

Creamy strawberry shortcake cheesecake dip is the perfect, no bake appetizer or dessert that’s perfect for serving at your next summer picnic or barbeque! It satisfies all your cheesecake cravings without needing to turn on the oven and is a total crowd-pleaser.

How to make the best Strawberry Shortcake Dip:

  • Add golden Oreos into the bowl of your food processor, then pulse them into fine crumbs.
  • Transfer the Oreo crumbs into a mixing bowl, then stir in the strawberry Jell-O mix and melted butter. Set aside.
  • Combine softened cream cheese with the marshmallow fluff and mix until smooth, then fold in the thawed whipped topping.
  • Transfer the cream cheese mixture into a shallow pie plate or serving dish and spread it into an even layer.
  • Sprinkle on the strawberry crumb topping and enjoy!

If I had to pick my favorite desserts, strawberry shortcake would be near the top of the list. There’s just something about strawberries and cream flavors that has me drooling for days. And while I’m calling this a strawberry shortcake dip, you could also call it a strawberry cheesecake dip – it really has that cheesecake flavor going on as well!

What sets this dip apart is its luscious cream cheese base, a pop of strawberry flavor from strawberry Jell-O, and a golden Oreo crumble that gives it the signature shortcake bar crunch.

If you’re a fan of the nostalgic strawberry shortcake ice cream bars, this Strawberry Shortcake Bar Dip will blow your mind! This dessert dip combines creamy, tangy, and sweet flavors into one indulgent treat that’s perfect for parties, potlucks, or a cozy night at home. It’s easy to whip up and pairs perfectly with Oreos, graham crackers, or fresh fruit.

My top tips:

  • FOOD PROCESSOR: No food processor? No problem! Using a food processor ensures evenly crushed Oreo crumbs, but if you don’t have one, you can put the cookies in a large resealable bag and crush with a rolling pin, mallet, or something similar. Just be sure that there aren’t any large chunks of cookies lef when you’re done.
  • ELECTRIC MIXER: I do recommend bringing out your electric mixer for the base of this dip because it makes combining the ingredients a breeze and whips a lot of air into the ingredients making them extra light and fluffy!
  • SOFTENED CREAM CHEESE: Softened cream cheese is key in this recipe! It’s super important to make sure your cream cheese is fully softened so that it incorporates into the other ingredients easily and ensures your dip will be super smooth rather than lumpy.
  • WHIPPED TOPPING: Using frozen whipped topping adds even more ease and convenience to this already easy recipe! Rather than taking the time to whip heavy cream, just make sure you’re whipped topping is fully thawed before use.
  • SERVING DISH: I like serving this dip in something wide and shallow, like a pie plate, so that there’s more surface area for the strawberry crumb topping in every bite!
  • MAKING IN ADVANCE: You can make this dip ahead of time and store it covered in the fridge for up to 3 days. I do recommend taking it out of the fridge about 20 minutes ahead of time to let it soften a little before enjoying.

You’ll also need things to dip into this Strawberry Shortcake Dip – graham crackers, animal crackers, shortbread cookies, vanilla wafers, fresh strawberries (or other fruit), are all great options. Or just choose your own favorites!
