- Semi-sweet chocolate chips
- Vegetable oil
- Butter
- Mini marshmallows- divided
- Vanilla extract
- Rice Krispie cereal
- Rainbow sprinkles
Craving something sweet but don’t feel like baking? This rice Krispie treat bark is exactly what you need! There’s no rolling or dipping required, you just have to be patient enough to let the chocolate chill and harden! This no-bake treat is so easy to make, you might make a batch every week!
Extra marshmallows, a splash of vanilla extract, and rainbow sprinkles make this rice krispie treat filling extra special! It comes together in a matter of minutes, and results in a filling that’s soft, chewy, and full of buttery flavor!
How to make the best rice krispie treat bark:
- Line a baking sheet with parchment paper or a silicone baking mat. Add the chocolate chips and vegetable oil to a microwave safe bowl and microwave in 30 second increments, stirring in between, until completely melted and smooth.
- Pour half the chocolate on your prepared baking pan and spread into a rectangle that’s roughly 9×13 inches. Transfer to the fridge or freezer to firm up for 15 minutes.
- Reserve 1 cup of mini marshmallows for later, then in a saucepan over medium heat, combine butter and marshmallows. Stir continuously until melted and smooth, then add in the vanilla extract and stir again to incorporate.
- Fold in the rice krispie cereal, remaining mini marshmallows, and sprinkles.
- Evenly press the rice krispie mixture on top of the chilled chocolate layer. Spread the remaining chocolate on top, and optionally garnish with more rainbow sprinkles.
- Transfer to the fridge or freezer to chill for another 15 minutes, then break or cut into pieces before enjoying.

My top tips:
- PREP YOUR PAN: Be sure to line your sheet pan with parchment paper, wax paper, or a silicone baking mat to prevent any sticking. This makes breaking up the hardened bark so much easier later on!
- MELTING THE CHOCOLATE: It’s important to microwave the chocolate in 30 second intervals, stirring in-between, to prevent any burning. I also like adding vegetable oil to the chocolate to thin it out a little and make it more spreadable. You could use coconut oil for a similar result.
- RICE KRISPIE MIXTURE: As I’m sure you can already guess- the rice Krispie mixture can get a little sticky. If you’re having a hard time spreading the rice krispie mixture onto the bottom layer of chocolate, try wetting your hands and pressing the mixture down with your fingertips.
- CHILLING AND BREAKING: If you’re adding any toppings, like sprinkles, be sure to add them BEFORE the top layer of chocolate has set. The toppings will not stick to firm chocolate. Once the bark is chilled and firm, you can then slice or break it into pieces.
- STORING: If you’re impatient like me, you’re going to want to place your bark in the freezer to speed up the chill time. I do like storing any leftovers at room temperature though so that the rice krispie treat center stays soft and chewy. This bark will keep in an airtight container at room temperature for up to 3 days.
