This easy ice cream sandwich recipe is honestly one of those sweet treats that you will want to make all summer long! There’s just something about key lime pie in the summer. I mean, I am all about a key lime dessert anytime of the year, but they just hit a little different when it’s warm outside.

These grahamwiches have all the traditional flavors of key lime pie… that you can hold with your hands! You make a simple no churn ice cream and then sandwich it between 2 graham crackers.

These are fantastic for parties because you can make them way ahead… or an easy dessert to have in your freezer when you want a little something sweet!

Ingredients you’ll need:

  • Heavy whipping cream
  • Sweetened condensed milk
  • Lime juice
  • Lime zest
  • Vanilla extract
  • Graham crackers

When the weather is hot, I’m all about the cold, refreshing recipes. Give me anything frozen, no-bake, etc. These key lime pie ice cream sandwiches are the perfect summer treat – easy to make, no baking required, and they’re cool and refreshing.

These Key Lime Pie Grahamwiches have a delightful tartness from the lime juice and zest, while still being creamy and indulgent. They really do taste like key lime pie (just in a fun little package). They’re easy to make in advance and store in your freezer for when your sweet tooth hits!

These tasty treats are a breeze to whip up! They’re perfect for summer too since they don’t require a lot of time in the kitchen (or any baking, etc). Just mix up your filling, build your sandwiches, and freeze. Then you’ll cut them apart once frozen and you’re ready to enjoy!

How to make the best Key Lime Pie Grahamwiches:

  • Using an electric mixer, whip the heavy whipping cream until it reaches stiff peaks. Add in the sweetened condensed milk, lime juice, lime zest, and vanilla extract and mix until smooth.
  • Grab your 9×13 baking pan and line it with plastic wrap, making sure to leave some overhang on the sides.
  • Break the graham cracker sheets in half so that they are now in squares, then cover the bottom of the pan with the squares of graham crackers. I fit 15 squares in the bottom of mine.
  • Evenly spread the key lime mixture on top of the graham crackers, then place the remaining squares of graham crackers on top so they mirror the bottom layer.
  • Lift the plastic wrap overhang up to cover the surface of the grahamwiches, then transfer the pan to the freezer for a minimum of 6 hours or until the filling is frozen solid.
  • Once frozen, remove from the pan and slice into squares before serving!

The no churn key lime pie ice cream tastes just like a key lime pie. It’s smooth and sweet with just the right amount of tart. Even better, it only takes about 20 minutes to put the grahamwiches together, so really the hardest part is being patient enough to let them freeze!

They’re the perfect thing for feeding a crowd that needs to cool off and can easily be made ahead of time. Bring these to your next potluck or summertime cookout and watch how fast they go!

My top tips:

  • USE AN ELECTRIC MIXER: I highly recommend using an electric mixer to make the key lime filling because it whips the heavy cream much faster than by hand and keeps the filling super fluffy and creamy!
  • KEY LIMES: You don’t need to use key limes here! I use regular limes and the taste difference is so minimal it doesn’t justify the extra work of juicing all those tiny limes in my opinion.
  • ZESTING: Try to remember to zest your limes before squeezing all the juice out of them. This makes zesting much easier since the lime is still firm and in one piece.
  • LINING YOUR PAN: Don’t skip the step of lining your baking pan! This will prevent any sticking and makes it MUCH easier to just lift the ice cream sandwiches out of the pan once they’re frozen to slice them up!
  • BREAKING THE GRAHAM CRACKERS: I recommend breaking the graham cracker sheets in half before arranging them in the pan. This turns them into squares and the squares act as a guide for where to cut the frozen key lime grahamwiches into individual sandwiches later.
  • SLICING: The longer you leave these ice cream sandwiches in the freezer, the better they will slice. If you can, I even recommend making them a day ahead of time and letting them freeze overnight so that the filling has time solidify before slicing.
  • STORING: If you aren’t enjoying immediately, you can store these frozen Key Lime Pie Grahamwiches in the freezer for up to 3 months! Once they’re frozen, go ahead and cut them, then individually wrap them in plastic wrap and stash in a Ziploc bag in the freezer!
