It’s officially that time of year where no-bake recipes are an absolute must for getting through this summer heat. With only 6 ingredients, 30 minutes, and a microwave, you can make this addictive key lime crack in no time.
Ingredients you’ll need:
- Cinnamon toast crunch
- Pretzels
- Mini marshmallows
- White chocolate chips
- Coconut oil
- Lime zest + juice
Key lime crack has all the bright, zesty flavors of key lime pie, in snacking form! The crunchy cereal, slightly salty pretzels, and chewy marshmallows make for the perfect balance of textures, keeping you coming back for more.
I like making this easy, no bake recipe for potlucks, BBQ’s, parties, or any time I need a quick ‘pick me up’ snack! Honestly the hardest part of this recipe is just waiting for it to harden in the fridge so that you can get to snacking!
How to make the best key lime crack:
- In a large mixing bowl, combine cinnamon toast crunch, pretzels, and mini marshmallows. Toss to combine, then set aside.
- In a microwave safe bowl, combine white chocolate chips and coconut oil, then microwave in 30 second intervals until smooth. Add 2 tbsp of lime zest to the melted chocolate and stir to combine.
- Pour the chocolate and lime zest mixture over the cereal, pretzel, and marshmallow mixture, then mix to evenly coat everything in the chocolate.
- Transfer the mixture to a parchment or silicone lined baking sheet and spread into an even layer.
- Top with a squeeze of fresh lime juice, as well as the remaining lime zest.
- Refrigerate for 20 minutes or until the chocolate has hardened. Break into pieces for serving.
I know white chocolate can be a little controversial, but trust me, it works perfectly in this recipe. The fresh lime zest and drizzle of lime juice really pack a punch and cut through the sweetness of the white chocolate here.
Although I do have one big no-no for working with white chocolate and lime juice. If you listen to nothing else I say, let it be this: do not, and I repeat, DO NOT add lime juice to the melted white chocolate. The extra liquid and acidity will cause the white chocolate to curdle and seize up, making it impossible to coat the dry ingredients in chocolate!
My top tips:
- If you want to make this key lime crack a little less sweet, you can substitute golden grahams cereal in place of the cinnamon toast crunch cereal. You could also take sheets of graham crackers and break them into smaller pieces.
- If you’d rather use key limes in this recipe, go for it! I just use regular limes because they’re bigger which makes them easier to zest, they’re a little more accessible at the grocery store and you really can’t tell any difference between the two in this recipe anyway!
- I like adding coconut oil to the white chocolate chips because it makes the chocolate a little thinner and pourable once melted. I find this thinner consistency makes it easier to evenly coat the cereal, pretzels, and marshmallows in the chocolate. You could also use vegetable oil if you don’t have coconut oil on hand.
- It may feel a little weird drizzling lime juice on top of this mixture but trust me, nothing will get soggy, and you’ll be left with the best fresh lime flavor that cuts through all the sweetness of this key lime crack perfectly!
- It’s important to let this sit in the fridge to harden completely. This will allow you to easily break the “crack” into pieces before enjoying. If you want to speed the process up, you can freeze it for about half the time.
- It’s best to store any leftovers in the fridge, then let them come to room temperature for 15-20 minutes. This way, the mini marshmallows will have a chance to softened back up from being in the fridge. This will keep well in the fridge for up to 4 days. Past that, you run the risk of the cereal and pretzels not being as crunchy.
