My top tips:

  • BROWNIE MIX: You already know I had to throw a shortcut in here somewhere so we’re using a boxed brownie mix to make this recipe even easier! If you’d still like to make yours from scratch, just be sure you use a recipe that traditionally fits a 9×9 pan.
  • GREASE YOUR PAN: Make sure you grease your mini muffin tin generously with non-stick cooking spray before adding the brownie batter. It’s no fun to make a dessert just for it to get stuck in the pan!
  • CREATING THE WELLS: You’ll want to press down the centers of each brownie bite while the brownies are still warm from the oven. I just used the rounded end of a spatula handle I had, but if you own a tart tamper, that would be even more efficient.
  • COOLING: It’s important to let the brownies cool completely before filling them with ganache. If you fill warm brownies, they will likely absorb the filling and become soggy.
  • GANACHE: You want to avoid boiling the heavy cream for ganache because overheating can scorch the cream and cause the ganache to split/seperate. Simply make sure it is hot enough to melt the chocolate, then let your stirring do the rest of the work!
  • PIPING BAG: Transferring the ganache into a piping bag helps control how much filling you’re piping into the brownie bites and in turn, keeps them nice and neat. You can also use a Ziploc bag here.
  • DECORATING: You can find candy coated chips on Amazon, but if you don’t want a huge container of them, a budget friendly hack is to buy a box of Pillsbury funfetti brownies at the grocery store and use the sprinkle packet that’s included.
  • REMOVING FROM THE PAN: I don’t recommend removing these Cosmic Brownie Bites from the muffin tin until they are fully cooled. If the edges of the brownies seem to be stuck to the pan, run a butter knife around the edges to loosen each one.
  • STORING: Transfer any leftover brownie bites into an airtight container and store at room temperature for up to 5 days or in the fridge for up to a week!
