Cosmic Brownie Bites
Cosmic Brownie Bites are fudgy mini brownies made with brownie mix, filled with rich chocolate ganache, and topped with colorful candy-coated chocolate chips for a fun bite-sized twist on the classic Cosmic Brownie.

Ingredients
- 1 (18 oz) box brownie mix batter prepared according to box instructions
- 1 1/4 cups semi-sweet chocolate chips
- 3/4 cup heavy whipping cream
- 1/4 cup rainbow candy coated chips
Instructions
- Preheat your oven to 350 degrees F and grease a 24-cup mini muffin tin with non-stick cooking spray.
- Prepare your brownie batter following the directions on the box, then evenly divide the batter among each greased mini muffin tin cup.
- Bake for 18-20 minutes, then immediately take the handle of a spatula or tart tamper and press down in the center of each brownie bite to create a well. Set aside to cool.
- Place the chocolate chips in a microwave-safe bowl. Pour the heavy cream over the chocolate chips and microwave for 45 seconds. Let sit for 1 minute, then whisk until smooth.
- Transfer the ganache into a piping bag or ziploc bag, cut off one end, and generously fill each brownie bite.
- Sprinkle each one with candy coated chips while the ganache is still wet. Let the ganache set, then enjoy!
