Buckeye Marshmallows

Buckeye Marshmallows are fluffy marshmallows coated in a creamy peanut butter and white chocolate mixture, chilled, then dipped in rich chocolate to create a fun, chewy twist on classic buckeye candy.

Ingredients

  • 35 marshmallows about 1 (10 oz) bag
  • 1 1/2 cups white chocolate chips
  • 1/2 cup creamy peanut butter
  • 1 1/4 cup semi-sweet chocolate chips
  • 2 tbsp vegetable oil

Instructions

  • Insert a toothpick into each marshmallow and place them upright on a sheet pan lined with parchment paper or a silicone mat, then set aside.
  • In a microwave safe bowl, combine the white chocolate chips and peanut butter. Microwave in 30 second intervals, stirring in-between until melted and smooth.
  • Dip each marshmallow into the melted chocolate and peanut butter, let any excess drip off, then return to the prepared baking sheet and transfer to the fridge for 30 minutes to set.
  • In another microwave safe bowl, combine chocolate chips and vegetable oil. Microwave in 30 second intervals, stirring in-between until the chocolate is melted and smooth.
  • Dip each peanut butter coated marshmallow ¾ of the way into the melted chocolate, let the excess drip off, then return to the prepared baking sheet and transfer to the fridge for 30 minutes to set the chocolate.
  • Optionally remove all toothpicks before enjoying them! Tip: if you want to cover the toothpick holes, rub your fingertip in a small circular motion over the hole to blend the peanut butter seamlessly until the hole disappears.
