Ingredients you’ll need:

  • Boxed brownie mix- batter prepared according to box instructions
  • Sweetened shredded coconut 
  • Sweetened condensed milk 
  • Almonds

How to make the best Almond Joy Brownie Bites:

  • Preheat your oven to 350 degrees F and grease a 24-cup mini muffin tin with non-stick cooking spray.
  • Prepare your brownie batter following the directions on the box, then evenly divide the batter among each greased mini muffin tin cup and bake for 18-20 minutes. Let cool completely. 
  • In a medium mixing bowl, combine shredded coconut and sweetened condensed milk.
  • Line a baking sheet with parchment paper or a silicone baking mat, then scoop roughly 2 tbsp of the coconut mixture onto the center of each cooled brownie bite, molding it into a smooth top.
  • Place the coconut topped brownie bites onto the prepared baking sheet, press an almond into the center of each coconut mound, and freeze for 30 minutes. 
  • In a microwave safe bowl, combine semi-sweet chocolate chips with vegetable oil. Microwave in 30 second intervals, stirring in between, until melted and smooth. 
  • Dip the tops of each brownie bite into the melted chocolate, then return to your prepared baking sheet. Transfer to the fridge to let the chocolate set before enjoying!

Don’t be fooled by how pretty they are—this recipe is surprisingly easy, even for beginner bakers. Using simple shortcuts like boxed brownie mix, and packaged sweetened flaked coconut to the almonds and sweetened condensed milk, you can whip up these beauties little to no time at all!

They’re great for parties or potlucks when you want to bring something that looks bakery-quality but doesn’t take hours to make.

My top tips:

  • BROWNIE MIX: You already know I had to throw a shortcut in here somewhere so we’re using a boxed brownie mix to make this recipe even easier! I swear the Ghirahdelli double chocolate brownie mix is just as good (if not better) than any other brownie recipe I’ve tried. If you’d still like to make yours from scratch, just be sure you use a recipe that traditionally fits a 9×9 pan.
  • GREASE YOUR PAN: Make sure you grease your mini muffin tin generously with non-stick cooking spray before adding the brownie batter. It’s no fun to make a dessert just for it to get stuck in the pan!
  • REMOVING FROM THE PAN: I don’t recommend removing these brownie bites from the muffin tin until the brownies are fully cooled. If the edges of the brownies seem to be stuck to the pan, you can run a butter knife around the edges to loosen each cup.
  • COCONUT TOPPING: This coconut topping can be sticky to work with, so I recommend using a triggered cookie scoop to evenly distribute the coconut topping onto the brownie bites, then either lightly grease or wet your hands and mold each coconut mound into a smooth top. Wetting your hands creates a non-stick barrier and prevents the gooey sweetened condensed milk from sticking to your fingers.
  • ALMONDS: But what if you’re not nuts about almonds? Then leave them out and you have Mounds Brownie Bites!
  • FREEZING: You’ll want to chill these Almond Joy Brownie Bites before dipping them into the melted chocolate. This gives the coconut topping a chance to firm up and ensures the topping will adhere to the brownies while being dunked into the bowl of chocolate.
  • MELTING CHOCOLATE: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. I also like adding vegetable oil to the chocolate to thin it out a little and make it a better consistency for dipping. You could also use coconut oil for a similar result.
  • COOLING: If you’re impatient like me, you’re going to want to transfer your Almond Joy Brownie Bites into the fridge or freezer for 30 minutes to make the chocolate set up faster. You can let these set at room temperature, but it will take a few hours for the chocolate to fully set up.
  • STORING: Transfer any leftovers into an airtight container and keep them in the refrigerator for up to one week or in the freezer for up to three months.
