S’mores are one of my all-time favorite desserts! The combination of melted chocolate, graham crackers, and marshmallows is second to none. If you’re a fan of s’mores like me but don’t want to build a campfire, then these s’mores bites are for you.
So, what do you do when you’re craving some serious ooey, gooey, chocolaty comfort food? You whip up these fudgy brownie bites that have a graham cracker crust and are topped with toasted marshmallows and more chocolate for good measure!
Ingredients you’ll need:
- Graham cracker crumbs
- Melted butter
- Granulated sugar
- Boxed brownie mix
- Marshmallows
- Hershey’s chocolate bars
S’mores brownie bites combine two of my favorite things, brownies and s’mores! The decadent brownie perfectly balances the buttery graham cracker crust, and the gooey marshmallow brings it all together holding that rich piece of chocolate on top!
Not only are these s’mores brownies decadent and irresistible, but they’re also SO simple to make. Sure, some people may think s’mores are only for a warm summer night, but with these delicious s’more bites, you’ll be able to enjoy them all year round!
How to make the best s’mores brownie bites:
- Preheat your oven to 350 degrees F and grease a mini muffin tin with non-stick cooking spray.
- In a medium mixing bowl, combine graham cracker crumbs, melted butter, and sugar.
- Add roughly 1 tbsp of the graham cracker mixture into the bottom of each muffin tin cavity, then use the bottom of a shot glass to press the graham cracker crumbs into mini crusts.
- Prepare your brownie batter following the directions on the box, then evenly divide the batter among each muffin tin cup. Bake for 20 minutes, then set aside to cool.
- In the meantime, turn your oven to broil, and cut each marshmallow in half. Top each brownie bite with half of a marshmallow, cut side down, then broil for 30 seconds, watching very closely so they don’t burn!
- Immediately top each toasted marshmallow with a square of chocolate, then let cool before removing from the muffin tin and enjoying!
S’mores brownie bites have a graham cracker crust, rich brownie layer, and are topped with a toasted marshmallow and chocolate square. All made in the oven, no campfire required! Not only are these brownie bites ridiculously easy to make, but they are also insanely delicious!
I love s’mores just as much as the next person, but sometimes it’s not always convenient to go outside and roast a marshmallow, especially when it’s cold out! If you know me, you know I’m always looking for a little time saving shortcut in the kitchen. This easy and delicious treat is made with boxed brownie mix so you can enjoy a bite-sized taste of s’mores in little to no time!
My top tips:
- GRAHAM CRACKER CRUMBS: You can buy pre-crushed graham cracker crumbs from the store or crush your own. To do this, add the graham crackers to the bowl of a food processor and pulse until they reach your desired size, or place them in a Ziploc bag, and bang with a rolling pin!
- SHOT GLASS: Be sure to compact the crusts before baking. I find the best way to do this is by adding about 1 tbsp of the graham cracker mixture into each muffin tin cavity, then press down using the bottom of a shot glass. This ensures the crusts holds together and aren’t too crumbly.
- BROWNIE MIX: You already know I had to throw a shortcut in here somewhere so we’re using a boxed brownie mix to make this recipe even easier! I swear the Ghirahdelli double chocolate brownie mix is just as good (if not better) than any other brownie recipes I’ve tried. If you’d still like to make yours from scratch, just be sure you use a recipe that traditionally fits a 9×9 pan.
- MARSHMALLOWS: Cutting the marshmallows in half can become a little sticky, so I recommend using scissors to keep things mess-free. I also find it helpful to stick the cut side of each marshmallow onto the brownie bites because the stickiness helps keep them in place.
- BROILING: Broiling these s’mores brownie bites gives the marshmallows a perfectly golden, toasty on surface! Just be sure to watch them closely because things tend to go from golden to burnt very quickly under the broiler. A few seconds is all it should take!
- CHOCOLATE: It’s important to top each brownie bite with a square of chocolate while the marshmallows are still warm and soft out of the oven. This ensures the chocolate will stick to the marshmallows.
- REMOVING FROM THE PAN: I don’t recommend removing these brownie bites from the muffin tin until the brownies are fully cooled. If the edges of the brownies seem to be stuck to the pan, run a butter knife around the edges to loosen each cup.
- STORING: Transfer any leftovers to an airtight container and store at room temperature for up to 5 days. If you’d like to enjoy yours warm and gooey, pop it in the microwave for 15 seconds!
