This fun twist on the traditional Christmas crack we all know and love swaps out saltine crackers for graham crackers and is loaded up with chocolate and marshmallows to create the perfect s’mores spin on a classic!
Ingredients you’ll need:
- Graham crackers
- Butter
- Brown sugar
- Semi-sweet chocolate chips
- Mini marshmallows
Some people refer to saltine toffee as Christmas crack, but I make it all year long! I love making this s’mores version when I’m craving classic smore’s flavor, but don’t have the energy for a bonfire!
Unlike traditional English toffee, this version doesn’t require a candy thermometer. Simply combine butter and brown sugar, bring it to a boil and it’s ready to get baked! This quick, easy, and fool proof recipe that can be made in less than 30 minutes from start to finish.
How to make the best s’mores crack:
- Preheat your oven to 350 degrees F and line a 10×15 jelly roll pan with foil.
- Cover the bottom of the pan with graham crackers, breaking them to fit as needed. Set aside.
- In a saucepan over medium heat, combine butter and brown sugar. Bring the mixture to a rolling boil, then continue boiling for 4 minutes.
- Carefully pour the hot toffee mixture evenly on top of the graham crackers, smooth out the surface with a spatula if needed.
- Bake for 8-10 minutes, then sprinkle chocolate chips and mini marshmallows evenly over top.
- Turn your oven to the broiler setting and transfer the s’mores crack back to the oven for 15-30 seconds. Watch closely to avoid burning the marshmallows.
- Let cool completely, then break into bite sized pieces before enjoying.
Dare I say this s’mores crack is better than campfire s’mores? One bite, and you’ll understand why this stuff is so addictive. It’s buttery, sweet, crunchy and can even be made in advance!
My top tips:
- LINE YOUR PAN: Don’t skip lining your pan! Lining the jelly roll pan with foil prevents sticking and makes it much easier to lift the cooled s’mores crack out of the pan to break into pieces.
- BREAKING THE GRAHAM CRACKERS: More likely than not, you’ll need to break some graham cracker sheets to completely cover the bottom of your pan. I used about 12 graham cracker sheets, breaking them to fit as needed, but you may need a little more or a little less depending on how you arrange them!
- TOFFEE MIXTURE: Although there are only two ingredients in this toffee, it can still be temperamental if not cooked for the proper amount of time. Be sure to follow my time measurements or else your toffee may end up too soft or may become too hard to bite into.
- WATCH THE MARSHMALLOWS: Broiling the tops of the marshmallows is optional but recommended! If you choose to broil them, do not walk away from the oven. You’ll need to watch them VERY closely because they can go from perfectly golden to very burnt in 2 seconds flat! Feel free to skip the broiling and leave the marshmallows as is or use dried marshmallow bits if you want something less chewy.
- LET COOL: It’s important to let the toffee cool and harden completely before breaking into pieces. To speed up the cooling process, feel free to pop in the fridge. Once the toffee is completely cooled, break into pieces for serving.
