Simple enough to whip up day of or make in advance! Sandwich a softened rolo between two ritz crackers, then drizzle all that deliciousness with melted white and semi-sweet chocolate. To make these even better, they’re easily portable when you want to share! This recipe can easily be doubled or tripled to feed a crowd too.
How to make the best rolo ritz cookies:
- Preheat your oven to 300 degrees and line a baking sheet with parchment paper or a silicone baking mat.
- Place half of the ritz crackers upside down on your prepared baking sheet, then top each cracker with a rolo.
- Bake for 4 minutes to soften the rolos, then sandwich another ritz cracker on top, pressing down slightly to flatten the rolos.
- In a microwave safe bowl, combine semi-sweet chocolate chips with 1 tsp vegetable oil, then microwave in 30 second intervals, stirring in-between until melted and smooth.
- Repeat with the white chocolate chips, then drizzle both melted chocolates on top of the cookie sandwiches.
- Immediately top with sprinkles of your choice, then let the chocolate set before enjoying!

I topped my cookies with red and green Christmas sprinkles for a festive touch, but you can make this easy no-bake treat any time of year. Feel free to easily customize the cookies by using different types of chocolate, sprinkles, chopped nuts, shredded coconut, etc.
My top tips:
- LINING YOUR PAN: Don’t skip the step of lining your pan with parchment paper or a silicone mat! This is super important especially when covering the cookie sandwiches in chocolate. Lining your pan prevents the chocolate from sticking and makes it easy to peel up the rolo bites once they’re chilled.
- BAKING THE ROLOS: It’s important to only leave the rolos in the oven for 4 minutes. No more and no less! You don’t want them to melt and be too soft to the point where they don’t hold their shape, but you do want them to be softened so that it’s easy to sandwich another cracker on top.
- SANDWICHING THE ROLOS: When sandwiching the rolos with another ritz cracker, you just want to press down lightly so that the rolos flatten out a little to fill both crackers. Try to avoid pressing too hard because the rolos will ooze out the sides.
- VEGETABLE OIL: Adding a little vegetable oil to the chocolate chips is my secret trick for silky smooth chocolate every time! The vegetable oil thins out the chocolate and makes it much easier to drizzle over the cookies.
- CHOCOLATE DRIZZLE: I find it helpful to transfer the melted chocolate chips to Ziploc bags before cutting off one end and drizzling. This makes the chocolate drizzle more evenly and keeps things mess free.
- SPRINKLES: The sprinkles in this recipe are completely optional and can be switched up depending on the holiday or occasion! It’s important to add the sprinkles while the chocolate is still wet. The wet chocolate acts as a glue, then once the chocolate sets, the sprinkles will stay in place.
- CHILLING: You can let these set at room temperature, but it will take hours for the chocolate to fully harden. To speed up the process, feel free to place these cookies in the fridge or freezer for 15 minutes to set the chocolate drizzle. Once set, carefully break off the excess candy-coating pieces around each cookie before enjoying!
- STORING: Once these rolo ritz cookies are fully set, I like storing any leftovers in an airtight container or Ziploc bag at room temperature. This keeps the rolos chewy and crackers fresh for up to a week!

Hi Shelly, although I haven’t tried freezing these Ritz cookies, you should be able to! I recommend only freezing for up to 2 months, then letting the cookies come to room temperature before enjoying to ensure the caramel pecan topping fully softens.
