  • Scoop a 1 inch layer of ice cream over one pan of treats and spread it into an even layer. 
  • Lift the second block of treats out of the pan using the parchment paper, flip it over and place it on top of the treats with the ice cream layer. 
  • Press down firmly and evenly, then peel off the parchment and freeze until solid, about 4-6 hours.
  • Use the parchment to lift the treats onto a cutting board, then cut into equal sized bars. If the treats are too hard, let sit at room temperature for 5–10 minutes. 
  • Return any extras to the freezer to prevent melting.

My top tips:

  • WORK WITH LOW HEAT: Make sure your heat is set to medium-low when melting down the butter and marshmallows. Doing this step slowly, and stirring continuously, will ensure that nothing burns, and your finished product will be super soft and chewy!
  • RICE KRISPIES: Use plain Rice Krispies like I did or switch it up with cocoa krispies or fruity pebbles for a fun twist!
  • PRESSING INTO THE PANS: The Rice Krispie treat mixture is very sticky and can be hard to spread with a spatula. I recommend lightly wetting or greasing your fingertips, or a square of parchment paper, and using that to gently press the mixture into the pan to avoid a sticky mess.
  • COOLING: The Rice Krispie treats have to cool before assembling the ice cream sandwiches so the residual heat doesn’t melt the ice cream layer. If the Rice Krispies are too warm when you add the ice cream, it will turn into a sticky, messy soup and ruin the structural shape of your sandwiches.
  • ICE CREAM FLAVORS: Easily swap vanilla ice cream for chocolate, cookies and cream, or strawberry. If your ice cream is extra firm, I recommend placing it in the fridge for about 15 minutes to help soften it before scooping to make it easier to spread.
