My top tips:
- OREO VARIETY: I’ve used both double stuffed Oreo’s and the original Oreo cookies and both work great. You could also use Oreo thins or the limited edition JOY Oreos around Christmas time!
- VEGETABLE OIL: Adding a little vegetable oil to the chocolate chips is my secret trick for silky smooth chocolate every time! The vegetable oil thins out the chocolate and makes it much easier to coat the Oreos.
- MELTING: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. White chocolate can be especially temperamental and prone to clumping, so it’s important to melt it down slowly.
- PEPPERMINT EXTRACT: Be sure you get peppermint extract — don’t be tempted to use spearmint, or all-purpose mint flavoring — you’ll end up with something that tastes of toothpaste, and that’s not the effect we’re after!
- COATING: I find a fork is a great tool to use to coat the Oreos in the melted chocolate, as the chocolate can drip off through the prongs of a fork. After you coat each Oreo, tap the fork against the bowl so the excess chocolate drips off. You’ll also want to scrape all the excess chocolate off the bottom of your cookies so that it won’t create a pool or “foot” at the bottom.
- CRUSHING CANDY CANES: You have a few options here! You can buy pre-crushed candy cane pieces from the store or crush your own! To do this, add the candy canes to the bowl of a food processor and pulse until they reach your desired size, or place them in a Ziploc bag, and bang the crap out of them with a rolling pin!
- TOPPING: The wet chocolate acts as a glue for the crushed peppermint pieces to stick to, so it’s important to top these with peppermint candy before the white chocolate has set.
- CHILLING: You can let these set at room temperature, but depending on the temperature in your kitchen, it will take about an hour for the chocolate to fully harden. To speed up the process, feel free to place these bites in the fridge for 15 minutes to set the chocolate.
- STORING: Transfer fully set cookies into an airtight container and store in a cool place for up to two weeks. You can also keep these in the freezer for up to 3 months.
