Sweet and salty peanut butter funky Fritos are loaded with Frito corn chips, a creamy peanut butter sauce and finished off with a little chocolate for good measure!
Why I love this recipe:
Initially, I couldn’t wrap my mind around combining corn chips with peanut butter and chocolate, but man am I glad I did! It’s unexpectedly delicious!
Funky Fritos are crunchy from the Fritos, chewy from the sweet peanut butter topping, and the perfect balance of sweet and salty! Once you try them, you won’t want Fritos any other way!!
Ingredients you’ll need:
- Granulated sugar
- Light corn syrup
- Creamy peanut butter- you could use crunchy too
- Fritos- traditional or scoops will both work
- Semi-sweet chocolate chips
This addicting treat isn’t only incredibly tasty, they’re easy to make too!
They’re the perfect thing to serve at BBQ’s, tailgates, and potlucks because they only take 15 minutes to make and don’t require any baking!
How to make the best peanut butter funky Fritos:
- Line a baking sheet with parchment paper or a silicone mat. Pour your bag of Fritos onto the baking sheet and arrange them into a flat layer. Set aside.
- In a saucepan over medium-high heat, combine granulated sugar and corn syrup. Stir continuously until you notice bubbles around the exterior of the saucepan (about 2-3 minutes).
- Add in the peanut butter and cook for another minute. Turn off the heat and pour the peanut butter mixture evenly over the Fritos.
- Immediately sprinkle chocolate chips on top, then let the residual heat from the peanut butter mixture melt them.
- Once melted, take a spoon, and spread the chocolate chips so you get a little chocolate in each bite!
- Let the funky Fritos cool completely before breaking into pieces and serving!
The addition of chocolate on these peanut butter funky Fritos is totally optional but of course recommended! I’ve also topped these with chopped m&m candies or Reese’s Pieces would be delicious too!
My top tips:
- It’s important to line your sheet pan with parchment paper or a silicone mat so that nothing sticks to the pan. This makes it much easier to break the cooled funky Fritos into pieces.
- You don’t want to cook the sugar and corn syrup mixture for too long. Just until you see it simmering around the edges of your saucepan. If you let this cook too long your peanut butter topping will be hard rather than chewy.
- Be sure to work quickly once you add the peanut butter to the sugar mixture. It will thicken and cool quickly and you want it to be a pourable consistency to evenly spread over the Fritos.
- I like topping the peanut butter mixture with a few chocolate chips while it’s still warm. The residual heat from the peanut butter mixture melts the chocolate chips and makes them spreadable so you get a little bit of chocolate in each bite!
- Let the peanut butter topping cool completely before breaking the funky Fritos into pieces. You can store this at room temperature for up to 4 days! After that, you risk the Fritos losing their crunchy texture.

Hi! How long do these keep? Do I need to refrigerate?
Sophie says
Hi Kristi! I wouldn’t refrigerate these for extended periods of time because the peanut butter topping will become hard. I recommend transferring any leftovers to an airtight container and storing at room temperature for up to 4 days! Hope this helps! 馃檪
