  • Pour the cookie crumbs into a medium sized mixing bowl, then add in the softened cream cheese and mix until well combined. 
  • Press the Oreo truffle mixture on top of the cooled cookie layer, then set aside. 
  • In a microwave safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30 second intervals, stirring in-between, until melted and smooth.
  • Pour the melted chocolate on top of the Oreo truffle layer, spread it into an even layer, then transfer to the fridge to set the chocolate, about 1 hour.

My top tips:

  • COOKIE DOUGH: You already know I had to throw a shortcut in here somewhere so we’re using store-bought cookie dough to make this recipe even easier! If you’d like to make your cookie layer from scratch, use a recipe that traditionally fits a 9×9 pan so that the cookie layer is not too thick.
  • COOLING: It’s important to let the cookie crust cool completely before topping it with your Oreo truffle mixture and chocolate. If you top a warm cookie, the cookie will likely sink and become soggy.
  • FOOD PROCESSOR: No food processor? No problem! Using a food processor ensures even, fine crumbs, but if you don’t have one, you can put the Oreo cookies in a large resealable bag and crush them with a rolling pin, mallet, or something similar. Just be sure that there aren’t any large chunks of cookies left when you’re done.
  • SOFTENED CREAM CHEESE: Softened cream cheese is key in this recipe! It’s super important to make sure your cream cheese is fully softened so that it incorporates into the other ingredients easily and ensures your truffle layer will be super smooth rather than lumpy.

  • COOLING: If you’re impatient like me, you’re going to want to transfer your Oreo Truffle Cookie Bars into the fridge for about an hour to make the chocolate sets up faster. You can let these set at room temperature, but it will take a few hours for the chocolate to fully harden.
  • STORING: Any leftover cookie bars can be transferred into an airtight container and stored in the fridge for up to 1 week. You can also freeze these for up to 2 months! To thaw, move them to the refrigerator overnight or for a few hours.
