These mini cheeseball bites have all the creamy, cheesy flavor of a loaded traditional cheeseball, but you can grab one and pop it right into your mouth. No crackers, knives, spreading, or waiting in line required!

There is something about a cheese ball that everyone seems to love. It is creamy, cheesy, savory, and practically made for parties. The only problem? When you make one big cheese ball, everyone has to stand around waiting for their turn to grab a cracker, cut off a piece, and spread the cheese onto it.

These Cheez-It cheeseball bites solve that problem completely!

Instead of making one large cheese ball, you make individual bite-sized cheese balls that are ready to grab and go. Each one already has a crunchy Cheez-It coating and another whole Cheez-It pressed right into the top. They are basically the perfect little two-bite party appetizer. And because they are individually portioned, everyone gets their own. No sharing required!

Ingredients you’ll need:

  • Cream cheese- softened
  • Diced green chillies 
  • Mexican blend cheese- shredded
  • Taco seasoning
  • Cheddar jack Cheez-It Crackers- divided
  • Parsley- chopped

These taco cheeseball bites taste like a loaded classic cheese ball with a fun taco-inspired twist. The cream cheese makes the center rich, creamy, and smooth, while the Mexican blend cheese adds even more cheesy flavor.

Taco seasoning gives the cheese balls a savory blend of classic taco spices, while diced green chilis add a mild peppery flavor and just enough kick to keep things interesting. The crushed Cheez-It crackers add a salty, cheesy crunch that makes every bite even better.

The whole Cheez-It on top is the finishing touch. You get that familiar crispy cheddar flavor with every bite, making these mini cheese ball bites seriously hard to stop eating!

One of my favorite things about these Cheez-It Taco Cheeseball Bites is how easy they are to make. You only need a handful of ingredients, and there is no cooking involved.

Simply combine softened cream cheese, diced green chilis, Mexican blend cheese, and taco seasoning until everything is evenly mixed. Then roll the mixture into small bite-sized balls. Next comes the fun part: roll each mini cheeseball in a mixture of crushed Cheez-It crackers and parsley. Press a whole Cheez-It into the top of each one, and that’s it!

You have a fun, flavorful appetizer that looks like you spent way more time making it than you actually did.

How to make the best Cheez-It Taco Cheeseball Bites:

  • In a medium mixing bowl, combine softened cream cheese, diced green chilis, shredded cheese, and taco seasoning, then mix until well incorporated.
  • Line a baking sheet with parchment paper or a silicone baking mat, then begin rolling the cream cheese mixture into 1 tbsp sized balls, placing them on your prepared baking sheet as you go. Your hands will get messy, so feel free to wear gloves.
  • Add your Cheez-It crackers into the bowl of a food processor and pulse to crush the crackers into small pieces. You can also break them up with a Ziploc bag and rolling pin if you don’t have a food processor.
  • In a small mixing bowl, combine the Cheez-It crumbs with fresh parsley. Working one by one, roll each mini cheeseball in the crushed crackers, coating the exterior completely. Then return to the prepared baking sheet.
  • Insert a Cheez-It into the center of each cheeseball bite before enjoying!

Don’t get me wrong—I love a classic cheese ball. But when you’re serving a crowd, mini cheeseball bites are so much easier.

With a traditional cheese ball, you need to put out a stack of crackers and a knife or spreader. Then everyone has to scoop up some of the cheese ball and spread it onto their cracker. It can get a little messy, especially when you have a hungry crowd gathered around the appetizer table.

These cheese ball bites with Cheez-It crackers are ready to eat right away. Just pick one up and enjoy!

My top tips:

  • SOFTENED CREAM CHEESE: Make sure to soften the cream cheese. Let the cream cheese come to room temperature so it mixes easily and creates a smooth, creamy filling. 
  • FOOD PROCESSOR: When crushing the Cheez-Its for the coating, you don’t need to turn them into a completely fine powder. A few slightly larger crumbs give the mini cheeseball bites a great crunchy texture. If you don’t have a food processor, you can put the crackers in a large resealable bag and crush with a rolling pin, mallet, or something similar.
  • KEEP THE BITES SMALL: Aim for bite-sized balls so they’re easy to grab and eat at parties. I find that 1 tbsp is the perfect size!
  • USE A SMALL COOKIE SCOOP: This makes it much easier to portion the cheeseball mixture evenly and keeps all of your bites around the same size.
  • CHILL BEFORE SERVING: If the mixture feels too soft to roll, pop it in the refrigerator for 20–30 minutes to make shaping the cheeseballs easier.
  • TOPPING: Add the cheez-its last. Press the whole Cheez-It gently into the top of each cheeseball after coating it so it stays crisp and looks extra cute.
  • CUSTOMIZING: I love using Cheddar Jack Cheez-Its because the flavor pairs so well with the taco-seasoned cheese filling. You could experiment with extra toasty Cheez-Its for a deeper toasted flavor or another cheesy variety if that’s what you have in your pantry. Changing the cracker flavor is such an easy way to put your own spin on these taco cheese ball bites.
  • MAKE THEM AHEAD: These are a great make-ahead appetizer! Prepare the cheeseball bites up to 3 days in advance and keep them refrigerated until you’re ready to serve. Cheez-It Taco Cheeseball Bites are best served chilled or slightly chilled so the cream cheese mixture stays firm enough to pick up easily.
