My top tips:
- MELON BALLER: You can use a melon baller or a paring knife to hollow out the inside of each strawberry, I just prefer using a melon baller because it prevents me from puncturing the base of the strawberries.
- DRY THE BERRIES: It’s very important that you dry the inside of each strawberry with a paper towel. You don’t want any liquid in the strawberries because excess moisture can make the filling watery, cause the strawberries to become soggy, and dissolve the dusting of powdered sugar on top.
- SOFTENED CREAM CHEESE: Softened cream cheese is key in this recipe! It’s super important to make sure your cream cheese is fully softened so that it incorporates into the other ingredients easily and ensures your filling will be super smooth rather than lumpy.
- PIPING BAG: Transferring the cannoli filling into a piping bag (or ziploc bag) helps control how much filling you’re piping into the strawberries and in turn, keeps them nice and neat.
- TOPPING: Chopped pistachios are my go-to topping here for a little salt and crunch, but you could also do more mini chocolate chips and/or orange or lemon zest for brightness! All of these are classic cannoli-style finishes.
