Buttery and crisp Ritz crackers act as the “crust” for these banoffee bites which is then used to hold the layers of sweetened cream cheese, banana slices, caramel, and toffee bites! They’re crunchy, soft, creamy, gooey, AND sweet all in one bite!
Ingredients you’ll need:
- Cream cheese- softened
- Powdered sugar
- Vanilla extract
- Ritz crackers
- Bananas
- Caramel dip
- Toffee bits
In case you didn’t know, banoffee comes from the combination of bananas and toffee. It’s usually enjoyed in pie form, with a graham cracker crust, dulce de leche (or caramel sauce), bananas and homemade whipped cream. There’s a rich combination of flavors and textures that makes it hard to stop eating!
Banoffee bites are a semi-homemade recipe and the perfect balance of convenience and flavor! Using Ritz crackers and store-bought caramel dip simplifies your life and makes this recipe super quick and easy to throw together!
How to make the best banoffee bites:
- In a medium mixing bowl, cream together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread a layer of the cream cheese mixture onto each Ritz cracker, then add a slice of banana on top of each one.
- Microwave the store-bought caramel dip for 30-45 seconds or until slightly warmed, then transfer to a Ziploc bag.
- Cut off one end of the bag, then pipe your desired amount of caramel on top of each banana.
- Sprinkle toffee bits on top of the caramel before enjoying!
Thing is, sometimes you just don’t want a whole pie! Instead of going through the hassle of baking a crust from scratch, assembling the whole pie, then waiting for it to refrigerate until set, we’re using a few shortcuts, but still enjoying all the same flavors!
I think it’s safe to say that if there’s a tray of bite-sized treats, I’ll eat them all! Especially when they’re as good as these banoffee bites. I love adding a sprinkle of toffee bits to the tops of these banoffee bites for extra texture and flavor! I mean who would say no to extra toffee?
My top tips:
- SOFTENED CREAM CHEESE: It’s important you’re using softened cream cheese so that it will incorporate smoothly into the other ingredients. If you don’t want to wait for a block of cream cheese to soften, you can use whipped cream cheese from the tub instead.
- MAKING IN ADVANCE: Unfortunately, this is one of those recipes that’s best enjoyed right away. The sliced bananas will turn brown, and the crackers will begin to lose their crunchy texture after a while, so I don’t recommend making these tiny treats too far in advance.
- RIPE BANANAS: You’ll want to use bananas that are just ripe and still slightly firm, so choose bananas with light, bright yellow skin with few to no brown spots. Anything riper or softer than that will produce a texture that’s both difficult to assemble and mushy.
- CARAMEL DIP VS CARAMEL SAUCE: I prefer using caramel dip, rather than caramel sauce here because it’s a little thicker and won’t run all over the place when drizzled. I just recommend warming the caramel dip in the microwave for 30 seconds to create a better consistency for piping.
- TOFFEE BITS: There are two options when shopping for your toffee bits: bits o’ brickle or just Heath toffee bits covered in chocolate. Bits o’ brickle are plain toffee bits (without the chocolate coating) and can be a little harder to find, so luckily both options work perfectly here. I find my toffee bits next to the chocolate chips at my grocery store.
