This baked garlic bread dip is exactly what it sounds like! It’s a cheesy, garlicy dip that has all the best parts of garlic bread baked into a dip form. There’s nothing not to love!

- Garlic heads
- Olive oil
- Cream cheese- softened
- Sour cream
- Mozzarella cheese- shredded
- Parmesan cheese- grated
- Fresh parsley- chopped
- Salt and pepper
- Red pepper flakes

This rich and creamy garlic bread dip is the ultimate flavorful appetizer packed with garlic, cheeses, and herbs, plus the perfect appetizer for holidays, game days, and everything in-between.
How to make the best baked garlic bread dip:
- Start by preheating your oven to 375 degrees F. Using a sharp knife, cut off the tops of the garlic heads and the bottoms of the shallots.
- Place the heads of shallots and garlic on a sheet of foil, then drizzle with olive oil, and season with a pinch of salt.
- Wrap the foil tightly around the shallots and garlic, then transfer to the oven to roast for 1 hour or until soft.
- In a mixing bowl, squeeze the heads of roasted shallots and garlic out of their skins, then mash them around with a fork to form a paste consistency.
- Add in the softened cream cheese and sour cream, then mix well before sprinkling in 1/2 cup shredded mozzarella, grated parmesan, chopped parsley, salt, pepper and red pepper flakes. Mix to combine.
- Transfer the dip an 8 or 9-inch pie plate, spread into an even layer, and top with remaining shredded mozzarella cheese.
- Lower your oven to 350 degrees F then bake the dip for 20-25 minutes or until golden brown and bubbly.
- Garnish with more fresh parsley and red pepper flakes before serving alongside bagel chips, toasted bread, or pita chips for dipping!
Want to make this easy appetizer in advance? No problem! You can prep this dip up to 3 days ahead of time by following the recipe as directed but holding off on topping with mozzarella cheese and baking. Instead, you’ll cover and store your dip in the fridge until you’re ready to bake.
Transfer any leftovers to an airtight container and store in the fridge for up to 5 days. Reheat the potion you want in a microwave safe dish until warmed through!
My top tips:
- ROASTING: Roasting the shallots and garlic is what gives this creamy dip all its garlic flavor! After roasting in the oven, they’ll be soft and sweet, so you don’t have to worry about the garlic flavor being too sharp.
- SOFTENED CREAM CHEESE: It’s important your cream cheese is softened so that it combines smoothly with the sour cream, cheeses, and seasonings. Using softened cream cheese also prevents this mixture from becoming lumpy and makes it much easier to spread into the bottom of your pie plate.
- SHREDDING YOUR OWN CHEESE: I like shredding my own mozzarella for this recipe rather than buying pre-shredded at the grocery store. It’s not an absolute must but shredding the cheese yourself allows the cheese to melt better compared to pre-shredded cheese that usually has added starch to prevent clumping.
- SKIP THE BAKING: If you aren’t in the mood for a hot dip, you can easily skip the steps of topping the dip with mozzarella cheese and baking. You would simply just transfer to the dip to your serving bowl, garnish and serve alongside your dippers of choice!
- BROILING: Broiling this garlic bread dip makes the cheese perfectly golden on top, while keeping the inside ooey gooey! Just be sure to watch it closely because things tend to go from golden to burnt very quickly under the broiler. A minute or so is all the time it should take!
- DIPPERS: I went for the convenience of serving this dip alongside some store-bought bagel chips, but feel free to slice up a fresh baguette, drizzle it with olive oil and toast it until crispy and golden brown for dipping too! I also enjoy this dip with pita chips or even tortilla chips in a pinch!
