If you remember eating Liittle Debbie cosmic brownies in your lunchbox as a kid, you’re going to love these cookies! They have that iconic dense and fudge brownie base with a rich ganache topping. The best part of making these yourself is that you can add as many of those delicious rainbow chip sprinkles as you like!
Although these cookies may not be as easy as buying a box of cosmic brownies at the store, I can assure you they don’t take long to make and, in my opinion, they taste even better than the Little Debbie version! This is a no chill dough that comes together in one bowl and I’m nearly positive you already have majority of the ingredients in your pantry!
Ingredients you’ll need:
- Melted butter
- Vegetable oil
- Granulated sugar
- Brown sugar
- Egg
- Vanilla extract
- All-purpose flour
- Unsweetened cocoa powder
- Baking powder
- Heavy cream
- Semi-sweet chocolate chips
- Rainbow chip sprinkles
The addition of vegetable oil in the cookie dough is what really helps make these cookies extra fudgy and decadent. Canola or coconut oil can be substituted in a pinch as well!
How to make the best cosmic brownie cookies:
- To start: Preheat your oven to 350 degrees F and line two baking sheets with parchment paper or silicone mats. Set aside.
- Make the chocolate cookie dough: In a large mixing bowl, combine melted butter, vegetable oil, granulated sugar, brown sugar, an egg and vanilla extract. Whisk until smooth. Sprinkle in the flour, cocoa powder, and baking powder. Fold together until there’s no visible flour remaining.
- Roll the cookies: Portion the dough into 2-inch sized balls (I got 12 cookies out of this). Then transfer them onto your prepared baking sheets and bake for 10-12 minutes. Let the cookies cool completely on the baking sheets.
- Make the ganache topping: Pour heavy cream into a microwave safe bowl and microwave for about 40 seconds. Add the chocolate chips to a separate small mixing bowl and pour the hot heavy cream overtop. Let this sit for 3-5 minutes. Stir the mixture until the chocolate is melted and has smoothly incorporated into the heavy cream.
- Dip and decorate: Dip the surface of each cooled cookie into the bowl of ganache and return to the baking trays. Add rainbow chip sprinkles to the surface of each cookie while the ganache is still wet. Let the ganache set, then enjoy!
The ganache topping for these cosmic brownie cookies is made from only 2 ingredients which makes it super easy to whip up! The hardest part is being patient enough to let it harden on the cookies before digging in!
My top tips:
- These cookies don’t spread very much in the oven, so if you like a thinner cookie, be sure to lightly flatten the dough balls before baking. I like keeping these cookies on the thicker side for extra fudginess, plus I find them easier to dip in the ganache.
- Let the cookies cool completely on the baking sheets before dipping them in the ganache topping. The residual heat from the baking sheets will continue baking the cookies out of the oven and you don’t want the ganache to slide right off a hot cookie either!
- Be sure to add the sprinkles to each cookie before your ganache has set. The only way they’ll stick to the cookies is if you sprinkle them on while the ganache is still wet.
- Enjoy these cookies room temperature or chilled. Chilling them results in an even more dense and fudgy texture so if that’s your jam, refrigerate them before enjoying!
- Rainbow chip sprinkles can be a pain to get your hands on, but a budget friendly hack is to buy a box of Pillsbury funfetti brownies at the grocery store, use the sprinkle packet that’s included and save the brownie mix for another day!
