If you love key lime pie, you need to try this Key Lime Pie Popcorn!  It is basically a snackable version of one of my favorite desserts, and honestly, I can’t decide if it’s more of a dessert or a snack. Either way, I know one thing: it is ridiculously addictive!

This recipe takes popcorn, Golden Grahams, and mini marshmallows and coats them in a creamy mixture of melted white chocolate and key lime pudding mix. The result is sweet, tangy, crunchy, a little salty, and completely addictive. And somehow, it really does taste like key lime pie!

Key Lime Pie Popcorn is also incredibly easy to make. In fact, you don’t even need an oven. The only cooking you really have to do is melting the white chocolate, and you can do that right in the microwave.

Once the white chocolate is melted, you stir in the key lime pudding mix, pour it over the popcorn, Golden Grahams, and mini marshmallows, and give everything a good toss. Let it set, and that’s pretty much it.

I love recipes like this because they feel a little bit special without actually requiring much effort. You can make a batch when you’re craving something sweet, throw it together for movie night, or make it for a party when you want something people can grab and snack on!

Ingredients you’ll need:

  • Microwave popcorn
  • Golden Grahams cereal
  • Mini marshmallows 
  • White chocolate chips 
  • Vegetable oil
  • Key lime pudding mix 
  • Green sprinkles or lime zest- optional for topping

The magic of this recipe is the white chocolate and key lime pudding mixture. Once you combine them, you get this creamy, sweet, slightly tangy coating that reminds me so much of the filling inside a key lime pie.

Then you have the Golden Grahams, which are probably my favorite part. Their crunchy graham cracker flavor gives you that classic graham cracker crust taste you expect from a key lime pie. You get the creamy lime filling flavor and the graham cracker crust flavor, just in a much more snackable package.

And then there is the popcorn.

The popcorn adds a salty, crunchy element that you just don’t get from an actual slice of pie. That sweet-and-salty combination is what makes it so easy to keep reaching back into the bowl for “just one more handful.” Spoiler: it will probably be more than one handful.

The mini marshmallows add a little extra sweetness and a soft, chewy texture that makes the whole thing even more fun to eat.

I think what makes this easy popcorn snack so good is the contrast in textures.

You have the creamy white chocolate coating, crunchy Golden Grahams, soft mini marshmallows, and crisp popcorn. And while the coating is sweet, the popcorn brings a little saltiness that keeps the whole thing from feeling overwhelmingly sweet.

That salty crunch is also what makes this feel more like a snack than simply another dessert.

It’s the kind of thing you can keep in a bowl on the counter and casually grab whenever you walk by. Which, depending on how much self-control you have, may or may not be a good thing.

How to make Key Lime Pie Popcorn:

  • Pour the popcorn into a large bowl, remove any unpopped kernels, then add in the Golden Grahams and mini marshmallows.. Mix to combine, then set it aside.
  • In a microwave safe bowl, combine white chocolate chips and vegetable oil. Microwave in 30 second intervals, stirring in-between, until melted and smooth. Then stir in the key lime pudding mix.
  • Pour the key lime flavored chocolate over the popcorn and stir to fully coat.
  • Transfer the popcorn onto a baking sheet lined with parchment paper or a silicone baking mat and push it into an even layer.
  • Optionally top with green sprinkles or fresh lime zest. Let the chocolate set completely, then break into pieces!

Sometimes I want key lime pie, but I don’t necessarily want to make a whole pie. That’s where this recipe comes in!

There’s something about turning the flavors of a classic dessert into a snack that makes it even more fun. Instead of sitting down with a fork and a plate, you can put a big bowl of key lime pie popcorn on the coffee table and let everyone grab a handful.

It’s especially good for movie nights because the popcorn makes it feel like a traditional movie snack, but the white chocolate, lime, Golden Grahams, and marshmallows make it taste like dessert. It’s the best of both worlds!

Plus, it’s so easy.

That is probably my favorite thing about this recipe. You can make a dessert-inspired snack with just a handful of ingredients and a microwave. It doesn’t require a special occasion, and you don’t need to be an experienced baker to pull it off.

Make it for a party. Make it for movie night. Make it when you’re craving key lime pie. Or just make it because you want something sweet, crunchy, and a little bit different!

My top tips:

  • POPCORN: You’ll need roughly 10 cups of popcorn for this recipe- but it’s up to you how you pop it. Feel free to pop your own using about 1/2 cup kernels, use a microwave bag, or buy pre-popped popcorn. Just be sure to remove any unpopped kernels.
  • BOWL SIZE: Use the biggest bowl you can find for tossing the popcorn! A big bowl makes it so much easier to ensure the popcorn gets fully coated in the white chocolate mixture. I also recommend using a rubber spatula here to avoid crushing the popcorn too much.
  • MELTING CHOCOLATE: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. White chocolate can be especially temperamental and prone to clumping, so it’s important to melt it down slowly.
  • VEGETABLE OIL: Adding a little vegetable oil to the chocolate chips is my secret trick for silky smooth chocolate every time! The vegetable oil thins out the chocolate and makes it much easier to coat the popcorn.
  • WORK QUICKLY: White chocolate hardens quickly, so mix it with the popcorn immediately after it is fully melted.
  • CHILLING: You can let the key lime chocolate coating set at room temperature, but it will take longer for the chocolate to fully harden. To speed up the process, feel free to place the popcorn in the fridge for 15 minutes to set the chocolate.
  • STORING: Store leftover Key Lime Pie Popcorn in an airtight container and keep it in a cool, dry place for up to 2 days. It’s also important to let the popcorn cool completely before storing. If you store it while still warm, the popcorn will lose that crispy texture. For longer storage, enjoy it straight from the freezer for up to 3 weeks!
