How to make the best Mint Chocolate Brownies:

  • Prepare your brownies according to the instructions on the box for an 8×8 pan, and let them cool completely.
  • Combine powdered sugar, 4 tbsp softened butter, milk, peppermint extract, vanilla extract, and 2 drops of green food coloring. 
  • If needed, add more food coloring until desired shade of green is reached, then spread the mint frosting evenly over cooled brownies.
  • In a small microwave safe bowl, combine semi-sweet chocolate chips and the remaining butter. Microwave for 30 seconds on high; stir well, then microwave again for 30 seconds. Stir until it becomes smooth and glossy.
  • Pour the chocolate on top of the mint frosting layer and spread evenly.
  • Sprinkle chopped Andes Mints over the brownies, then place the brownies in the fridge for 30 minutes to 1 hour to set the chocolate topping, then slice into squares before serving!

My top tips:

  • BROWNIE MIX: You already know I had to throw a shortcut in here somewhere so we’re using a boxed brownie mix to make this recipe even easier! If you’d still like to make yours from scratch, just be sure you use a recipe that traditionally fits an 8×8 or 9×9 pan.
  • COOLING: It’s important to let the brownies cool completely before topping them with your frosting and ganache. If you top warm brownies, the frosting will melt and the brownies will likely become soggy.
  • ELECTRIC MIXER: I do recommend bringing out your electric mixer to mix the peppermint frosting because it makes combining the ingredients a breeze and whips a lot of air into the mixture making it extra smooth and creamy!
  • PEPPERMINT EXTRACT: Be sure you are using peppermint extract — don’t be tempted to use spearmint, or all-purpose mint flavoring — you’ll wind up with something that tastes of toothpaste, and that’s not what we’re after!
  • FOOD COLORING: I recommend using green gel food coloring because it has a higher concentration than liquid and it won’t impact the consistency of your filling to get a good green color. All food coloring is different, so start with a small amount and remember that you can always add more, but you can’t take it away!
  • TOPPING: The chocolate ganache acts as a glue for the mint candy pieces to stick to, so it’s important to top these with chopped Andes Mints before the chocolate coating has set. If you can find Andes Mint baking chips, you can use those here as well!
  • CHILLING: You can let these  set at room temperature, but it will take hours for the ganache to fully set. To speed up the process, feel free to place it in the fridge (or even the freezer) for 30 minutes to set the chocolate layer.
  • STORING: Store the brownies in an airtight container in the refrigerator for up to five days. Let them sit at room temperature for about 10 minutes before serving so the frosting softens and the chocolate becomes perfectly creamy again. These brownies also freeze well, making them a great make-ahead dessert for the holidays or whenever you want to have a sweet treat waiting in the freezer!
