- 1 (18 oz) box brownie mix prepared according to box instructions
- 2 cups powdered sugar
- 8 tbsp butter (1 stick) softened and divided
- 3 tbsp milk
- 1 tsp peppermint extract
- 1/2 tsp vanilla extract
- 1/2 cup semi-sweet chocolate chips
Prepare your brownies according to the instructions on the box for an 8x8 pan, and let them cool completely.
Combine powdered sugar, 4 tbsp softened butter, milk, peppermint extract, vanilla extract, and 2 drops of green food coloring.
If needed, add more food coloring until desired shade of green is reached, then spread the mint frosting evenly over cooled brownies.
In a small microwave safe bowl, combine semi-sweet chocolate chips and the remaining butter. Microwave for 30 seconds on high; stir well, then microwave again for 30 seconds. Stir until it becomes smooth and glossy.
Pour the chocolate on top of the mint frosting layer and spread evenly.
Sprinkle chopped Andes Mints over the brownies, then place the brownies in the fridge for 30 minutes to 1 hour to set the chocolate topping, then slice into squares before serving!
