Buckeye Rice Krispie Treats

Of all the peanut butter desserts that exist, buckeyes have been one of my all-time favorites since I was a kid. I grew up on buckeyes during every holiday season and that flavor will always scream “comfort food dessert” to me. 

A little ball of peanut butter fudge dipped in chocolate? Yes, please! So it’s no surprise that a Rice Krispie Treat recipe based on the same flavor profile would be amazingly delicious, too.

We all love a good Rice Krispie Treat, so these Buckeye Rice Krispie Treats are a fun take on that classic. They’re like a mashup between traditional peanut butter balls and Rice Krispie Treats that makes these a crave-worthy sweet, crunchy, creamy snack.

Ingredients you’ll need:

  • Creamy peanut butter
  • Butter- softened
  • Powdered sugar
  • Vanilla extract
  • Rice Krispie Treats
  • Semi-sweet chocolate chips 
  • Vegetable oil 
  • Peanut butter chips

Chocolate Peanut Butter Rice Krispie Treats are a decadent take on a classic rice cereal dessert. You’ll love the rich chocolate, creamy peanut butter and crispy texture in every bite!

When it comes right down to it, I don’t think anyone can resist the chewy, marshmallow-y goodness of a Rice Krispie Treat. Add peanut butter and chocolate to the mix and you have just about the perfect no-bake dessert.

Pre-made Rice Krispies Treats are spread with a creamy peanut butter truffle mixture, dipped in chocolate, and drizzled with melted peanut butter chips. The next time you are in the produce section at the grocery store, grab a package of Rice Krispie Treats and you’re on your way to having one of the most delicious treats ever! 

How to make the best Buckeye Rice Krispie Treats:

  • Unwrap the Rice Krispie Treats and place them on a lined baking sheet, then set aside.
  • In a medium mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until smooth.
  • Roll the peanut butter mixture into 1-inch sized balls, then place 1 ball on top of each Rice Krispie Treat.
  • Carefully flatten the peanut butter balls onto the surface of each Rice Krispie Treat, spreading all the way to the edges.
  • In a microwave safe bowl, combine chocolate chips and 1 tbsp vegetable oil. Microwave in 30 second intervals, stirring in-between, until melted and smooth.
  • Dunk the tops of each Rice Krispie Treat into the melted chocolate, let any excess chocolate run off, then transfer back to your prepared baking sheet.
  • Once all the Rice Krispie Treats are dipped, combine peanut butter chips and 1/2 tbsp vegetable oil in another microwave safe bowl and microwave in 30 second intervals, stirring in-between, until melted and smooth.
  • Drizzle the melted peanut butter chips over each Rice Krispie Treat, then transfer to the fridge to set the chocolate before enjoying.

Your favorite childhood treat, Rice Krispies, just got a makeover and if I do say so myself, they are even better! These chewy, no bake bars are loaded with peanut butter and chocolate to take them to a whole new level. They come together in a blink and are sure to please the masses. Do I dare even say they might be the first gone if you bring them somewhere? I think so!

If you love easy recipes & peanut butter – then these Buckeye Rice Krispie treats are just the thing for you. They’re an easy, no-bake recipe that you can whip up in no time. And when there’s peanut butter & chocolate involved, you really can’t go wrong.

My top tips:

  • RICE KRISPIE TREATS: Using store-bought Rice Krispie Treats makes this recipe quick and easy! If you want to make homemade Rice Krispie Treats, I recommend using a recipe that fits a 9×13 pan. 
  • PEANUT BUTTER MIXTURE: If you have an electric mixer, I recommend bringing it out to combine the peanut butter ball mixture. I find the peanut butter mixture is smoother and comes together much easier this way.
  • PEANUT BUTTER BALLS: The softer the peanut butter mixture is, the easier it’ll be to flatten the peanut butter balls onto each Rice Krispie Treat. Using softened butter in the peanut butter mixture really helps with this. 
  • VEGETABLE OIL: Adding a little vegetable oil to the chocolate chips is my secret trick for silky smooth chocolate every time! The vegetable oil thins out the chocolate and makes it much easier to dip (and drizzle over) the Rice Krispie Treats.
  • DRIZZLING: I find it helpful to transfer the melted peanut butter chips to a Ziploc bag before cutting off one end and drizzling. This makes the chocolate drizzle more evenly and keeps things mess free.
  • STORING: Once these Buckeye Rice Krispie Treats are fully set, I like storing any leftovers in an airtight container or Ziploc bag at room temperature for up to 1 week. They can also be stored in the fridge, but I recommend letting them come to room temperature, so the Rice Krispie Treats soften before enjoying.
