These easy strawberry crumb bars feature a buttery crust, fresh strawberry filling and crunchy crumb topping! It’s the perfect way to enjoy fresh, in season berries!

If you’re a fan of a good old-fashioned crumble, you’re going to love these strawberry crumb bars! They’re a great way to use up strawberries, (especially if you’re like me always pick way too many at the strawberry farms) and are perfect for bringing to summer picnics, parties, or potlucks!

Ingredients you’ll need:

For the crust and crumb topping:

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Melted butter
  • Egg
  • Vanilla extract

For the strawberry layer:

  • Fresh strawberries, chopped into pieces
  • Granulated sugar
  • Vanilla extract
  • Cornstarch

One of my favorite things about these crumb bars is how easy they are to make! The dough can be made in a mixing bowl or food processor using just a few ingredients, and the filling layer doesn’t require a stovetop! Fresh strawberries are mixed with sugar, vanilla extract, and cornstarch, then you’re ready to assemble and bake the bars!

The crust and crumb topping are made from the same dough and is another reason these strawberry crumb bars are so easy to make! With just 10 minutes of prep time, you’ll be on your way to enjoying these delicious strawberry crumb bars before you know it!

How to make the best strawberry crumb bars:

  • Preheat your oven to 375 degrees F and grease an 8×8 or 9×9 baking pan. Set aside.
  • In a large mixing bowl or the bowl of your food processor, combine flour, sugar, and baking powder. Whisk to combine, then pour in melted butter, crack in an egg, and add vanilla extract. Mix or pulse to form a dough. Set aside.
  • In another mixing bowl, combine chopped strawberries, sugar, vanilla extract, and cornstarch. Mix to fully coat the strawberries.
  • Take half the dough and press it into the bottom of your greased baking pan. Spoon the fresh strawberry mixture over the bottom crust, then crumble remaining dough on top.
  • Bake for 40-45 minutes, let cool in the pan for at least 1 hour and slice into bars for serving.

In my opinion, spring and summer are the best times for baking fruit crisps, crumbles, and pies. Strawberry crumb bars honestly remind me of all these things combined! The bars themselves are soft yet hold together well, and the crumb topping is slightly crunchy which makes these bars the perfect balance of tender and crisp.

FAQ and tips!

  • For this recipe, fresh strawberries are best. Frozen strawberries contain too much liquid and make the bars soggy. If you can’t find good fresh strawberries, you can also make this recipe using strawberry jam or preserves for the filling layer, just know that it’ll change the texture since there wouldn’t be chunks of fresh fruit.
  • Replace strawberries with other fruits! Blueberries, raspberries, and blackberries are obvious contenders here due to their similar textures and water content. Just follow the recipe as directed, switching out the strawberries with the other fruit of your choice.
  • 8×8 or 9×9 baking pans will both work for this recipe. I recommend using an 8×8 pan if you’d like slightly thicker bars. Keep in mind this recipe can also be doubled and baked in a 9×13 pan to feed a crowd!
  • Let the bars cool! It’s important you let these cool for at least 1 hour in the pan before slicing. If you cut the bars right away, they will fall apart, and you’ll have a huge mess on your hands (literally)!
