Strawberry Crumb Bars

For the crust and crumb topping:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 tsp baking powder
- 1/2 cup melted butter 1 stick
- 1 egg
- 1 tsp vanilla extract
For the strawberry layer:
- 2 cups fresh strawberries, chopped (1) 10 oz container
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 tbsp cornstarch
Preheat your oven to 375 degrees F and grease an 8x8 or 9x9 baking pan. Set aside.
In a large mixing bowl or the bowl of your food processor, combine flour, sugar, and baking powder. Whisk to combine, then pour in melted butter, crack in an egg, and add vanilla extract. Mix or pulse to form a dough.Set aside.
In another mixing bowl, combine chopped strawberries, sugar, vanilla extract, and cornstarch. Mix to fully coat the strawberries.
Take half the dough and press it into the bottom of your greased baking pan. Spoon the fresh strawberry mixture over the bottom crust, then crumble remaining dough on top.
Bake for 40-45 minutes, let cool in the pan for at least 1 hour and slice into bars for serving.
