This no-bake cheesecake treat is the perfect balance of sweet, salty, crunchy and creamy. Just like a full-size cheesecake, these bite-sized treats are packed with creamy flavor. Just add your favorite pie filling topper!
How to make the best Strawberry Cheesecake Crackers:
- In a medium mixing bowl, combine softened cream cheese, heavy whipping cream, powdered sugar and vanilla extract, then mix until smooth and creamy.
- Transfer the cheesecake filling into a piping bag or Ziploc bag, cut off one end, then pipe about 1 tsp of filling onto each Ritz cracker.
- Spoon 1 tsp of strawberry pie filling on top of each one and enjoy!

- RITZ CRACKERS: I love the buttery flavor and flakey texture that Ritz crackers give these strawberry cheesecake crackers, but you can also use something sweeter as the base, like a graham cracker. Just break them in half so you still have a bite-sized treat!
- SOFTENED CREAM CHEESE: Softened cream cheese is key in this cheesecake topping. It’s super important to make sure your cream cheese is fully softened so that it incorporates into the other ingredients easily, which ensures your filling will be super smooth rather than lumpy!
- ELECTRIC MIXER: An electric mixer is helpful to make the no bake cheesecake topping super light and fluffy. You can still make the filling without one, just make sure the cold ingredients have come to room temperature prior to combining them.
