Instead of building s’mores over a fire, everything gets tossed together into one irresistible snack mix. Buttery popcorn is combined with crunchy Golden Grahams cereal and mini marshmallows, then coated in a warm melted marshmallow mixture. A drizzle of chocolate over the top brings the whole thing together and gives it that classic s’mores flavor everyone recognizes instantly.

The result is a snack that tastes like a campfire dessert but is much easier to make!

Ingredients you’ll need:

  • Microwave popcorn
  • Golden Grahams cereal 
  • Mini marshmallows- divided 
  • Butter 
  • Brown sugar
  • Milk chocolate chips
  • Vegetable oil

One of the best things about S’mores Popcorn is the texture. Every handful has a little bit of everything! The popcorn is light and buttery with just a hint of salt, which balances out the sweetness from the marshmallows and chocolate. The cereal adds a satisfying crunch, while the melted marshmallow coating holds everything together in soft, chewy clusters.

Then there’s the chocolate drizzle. It hardens slightly as it cools, adding just the right amount of richness to each bite. Altogether, the flavors are sweet but not overwhelming, with the popcorn giving the snack that perfect sweet-and-salty balance people love.

S’mores have been a favorite treat for generations. The combination of graham crackers, melted chocolate, and gooey marshmallows is simple but incredibly satisfying. The only downside is that traditional s’mores usually require a campfire. That’s where S’mores Popcorn comes in!

How to make the best S’mores Popcorn:

  • Pour the popcorn into a large bowl, remove any unpopped kernels, then add in the Golden Grahams and 2 cups of mini marshmallows. Mix to combine, then set it aside.
  • In a medium saucepan, combine the remaining mini marshmallows, butter, and brown sugar. Stir over medium heat until the mixture is melted and smooth.
  • Pour the marshmallow mixture over the popcorn and stir to fully coat.
  • Transfer the popcorn onto a baking sheet lined with parchment paper or a silicone baking mat and push it into an even layer.
  • In a microwave safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30 second intervals, stirring in between, until melted and smooth.
  • Transfer the melted chocolate into a ziploc bag, cut off one end, and drizzle the chocolate over the popcorn.
  • Let the chocolate set completely, then break into pieces!

There’s something about the flavor combination that just works. Chocolate, graham, and marshmallow have always been a perfect trio, and popcorn adds a light, buttery base that ties everything together.

At the same time, it feels a little more unique than regular popcorn or snack mix. The marshmallow coating creates little chewy clusters that make the snack extra satisfying, and the chocolate drizzle gives it that gourmet popcorn feel. It’s simple, comforting, and just a little indulgent.

S’mores popcorn is the kind of treat that works for almost any occasion. Since it’s served in a big bowl or broken into snackable, chewy clusters, it’s perfect for sharing with friends and family.

It’s especially great for movie nights. Popcorn is already a classic movie snack, so adding the flavors of s’mores makes it feel extra special without a lot of extra work!

My top tips:

  • POPCORN: You’ll need roughly 10 cups of popcorn for this recipe- but it’s up to you how you pop it. Feel free to pop your own using about 1/2 cup kernels, use a microwave bag, or buy pre-popped popcorn. Just be sure to remove any unpopped kernels.
  • MARSHMALLOW COATING:  It’s important that you’re continuously stirring the marshmallows, butter, and brown sugar to prevent any burning. You do NOT need to bring the mixture to a boil. It just needs to be warm, smooth, and easily pourable.
  • CHOCOLATE: It’s important to heat the chocolate in 30 second intervals because it can burn and seize easily. It’s hard to reverse clumpy chocolate, so I recommend watching it closely! You can also use a double boiler here instead of the microwave.
  • VEGETABLE OIL: Adding a little vegetable oil to the chocolate chips is my secret trick for silky smooth melted chocolate every time! The vegetable oil thins out the chocolate and makes it much easier to evenly drizzle over the popcorn.
  • DRIZZLING: I find it helpful to transfer the melted chocolate into a Ziploc bag before cutting off one end and drizzling. This makes the chocolate drizzle more evenly and keeps things mess free.
  • CHILLING: You can let the chocolate drizzle set at room temperature, but it will take longer for the chocolate to fully harden. To speed up the process, feel free to place the popcorn in the fridge for 15 minutes to set the chocolate drizzle.
  • STORING: This is one of those recipes that tastes best day of so that the popcorn doesn’t become stale and lose its crunchy texture. Leftovers will keep in an airtight container for 1-2 days, but this really is best enjoyed day of.
