I’ve tried S’mores lots of different ways including S’mores Brownie Bites, Frozen S’mores, S’mores Strawberries, S’mores Puppy Chow and Caramel S’mores Clusters but this bark might be a new household favorite!

Ingredients you’ll need:
- Graham crackers- divided
- Large marshmallows
- Butter
- Semi-sweet chocolate chips
- Mini marshmallows

Honestly, I use s’mores as an excuse to start a bonfire in the backyard at least once a week! Because nothing says summer like a gooey marshmallow oozing out from crunchy graham crackers and sweet chocolate.

But the best part of this homemade S’mores Bark recipe is that no cooking or baking is required! Just stick it in the fridge for 30 minutes to set, and you’ll be ready to serve! It makes the perfect easy dessert to bring to summer parties and barbecues!
How to make the best S’mores Bark:
- Line a baking sheet with parchment paper or a silicone baking mat, then lay down 12 graham cracker sheets to cover the bottom of the baking sheet.
- Add the large marshmallows and butter into a microwave safe bowl, then microwave in 30 second intervals until completely melted and smooth.
- Quickly pour the melted marshmallow mixture on top of the graham crackers, then spread into an even layer.
- Add the chocolate chips into another microwave safe bowl, and microwave in 30 second intervals until completely melted and smooth.
- Pour the melted chocolate on top of the marshmallow layer, then spread into an even layer.
- Immediately crumble the remaining graham crackers over top and sprinkle with mini marshmallows.
- Transfer to the fridge for at least 30 minutes to set the chocolate before cutting or breaking into pieces.

This recipe is seriously easy. There’s no need for a campfire or oven. Simply melt the marshmallows and chocolate in the microwave, then layer over graham crackers. Finally, top with crushed graham crackers and mini marshmallows to make it look pretty!

My top tips:
- LINE YOUR PAN: It’s important to line your baking sheet with parchment paper, wax paper, or a silicone baking mat to prevent any sticking. This is important because it creates a non-stick barrier for any gooey marshmallow that seeps out and makes breaking up the hardened bark so much easier later on.
- MARSHMALLOW LAYER: You’ll want to work quickly to spread the melted marshmallow layer on top of the graham crackers. Once the mixture starts to cool, it becomes much harder to spread into an even layer.
- MELTING CHOCOLATE: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. I used semi-sweet chocolate chips here because I like how they aren’t overly sweet, but feel free to use milk or even dark chocolate chips too.
- TOPPING: The top layer of melted semi-sweet chocolate acts as a glue for the crushed graham crackers and mini marshmallows to stick to, so it’s important to sprinkle on the toppings before the chocolate has set.
- CHILLING: You can let this bark set at room temperature, but it will take hours for the chocolate to fully harden. To speed up the process, feel free to place it in the fridge for 30 minutes to set the chocolate layer..
- STORING: Transfer any leftover S’mores Bark into an airtight container and store in a cool, dry place for up to 2 days. If you want this to last longer, skip the mini marshmallows on top and it will store well for 1 week!
