But mostly, make them because they taste way better than a treat this easy has any right to taste. They’re fun, they’re colorful, and they disappear off the plate faster than anything else.

Rolo Ritz Freckles are basically upgraded Ritz sandwiches. You sandwich a Rolo candy between two crackers, and finish it off with a melty chocolate kiss pressed into sprinkles.
They’re quick, colorful, and perfect for when you want a treat that looks fun without doing any actual baking.
The name “freckles” comes from the fun part — pressing the bottom cracker into a bed of colorful sprinkles. The sprinkles stick to the warm Hershey’s kiss and create a speckled, freckle-covered top.
It’s cute. It’s whimsical. And it makes them look way more impressive than the effort it takes to make them!
How to make Rolo Ritz Freckles:
- Preheat your oven to 300 degrees and line a baking sheet with parchment paper or a silicone baking mat.
- Place half of the Ritz crackers upside down on your prepared baking sheet, then top each cracker with a Rolo.
- Bake for 4 minutes to soften the Rolos, then sandwich another Ritz cracker on top, pressing down slightly to flatten the Rolos, then place in the freezer to allow the Rolos to set.
- In the meantime, lower your oven temperature to 200 degrees F and spread a thin, even layer of nonpareils sprinkles onto a baking sheet.
- Place the Hershey’s Kisses on top of the sprinkles, evenly spaced apart and bake for 10 minutes to fully soften the kisses.
- Remove the tray from the oven and gently press a Rolo stuffed Ritz cracker onto each softened kiss.
- Return to the fridge or freezer for 15 minutes or until the chocolate is firm.

My top tips:
- BAKING THE ROLOS: It’s important to only leave the Rolos in the oven for 4 minutes. No more and no less! You don’t want them to melt and be too soft to the point where they don’t hold their shape, but you do want them to be softened so that it’s easy to sandwich another cracker on top.
- SANDWICHING THE ROLOS: When sandwiching the Rolos with another Ritz cracker, you just want to press down lightly so that the Rolos flatten out a little to fill both crackers. Try to avoid pressing too hard because the Rolos will ooze out of the sides.
- CHILLING: I recommend placing the tray of cookie Rolo stuffed Ritz crackers into the freezer while the kisses soften in the oven. This allows the Rolos to firm back up quickly so that the cookies are not a slippery mess when you are pressing them into the softened kisses.
- SPRINKLES: I went ahead and made these festive for Christmas with a red, green, and white sprinkle mix, but absolutely feel free to swap the colors depending on the occasion or holiday! Stick to using nonpareils though, they create a nice thin layer of sprinkles on each cookie and have a satisfying crunch!
- HERSHEY KISSES: You’ll want to be sure you lower your oven temperature to soften the kisses. If your oven temp is too high, the outsides of the kisses will scorch and the insides will remain firm. Kisses soften much more evenly at a lower oven temp.
- STORING: Once these Rolo Ritz Freckles are fully set, I like storing any leftovers in an airtight container or Ziploc bag in a cool, dry place at room temperature. This keeps the Rolos chewy and crackers fresh for up to a week! You can store them in the fridge, but I recommend setting them out ahead of time to let the Rolos soften and become chewy again prior to enjoying.
