Ingredients you’ll need:
- Ritz crackers
- Kraft baking caramels
- Brown sugar
- Cinnamon
- Heavy whipping cream
- Pecans- chopped
I love a recipe that looks impressive but barely requires any effort to make and these pecan pie ritz cookies are just that! Buttery, flakey ritz crackers act as the “cookies” to these no bake pecan pie cookies and are the perfect time saving shortcut!
Did I mention these are ridiculously easy to make? Pecans are mixed into a super simple caramel sauce and scooped on top of Ritz crackers. Yup, they’re just as tasty as they sound.
How to make the best pecan pie ritz cookies:
- Line a baking sheet with parchment paper or a silicone baking mat, then lay out the Ritz crackers and set aside.
- In a microwave safe bowl, combine caramels, brown sugar, cinnamon, and heavy whipping cream.
- Microwave in 30 second intervals, stirring in-between, until melted and smooth.
- Fold in chopped pecans, then immediately spoon a dollop of the caramel pecan mixture on top of each cracker.
- Let cool completely before enjoying!
If you’re a fan of sweet and salty combinations, then you’ll love these pecan pie ritz cookies. Sweet from the caramel, salty from the ritz, and oh-so delicious! Luckily, this recipe can easily be doubled or tripled because these disappear FAST!
Simple enough to whip up day of or make in advance! To make them even better, they’re easily portable when you want to share!
My top tips:
- CRACKERS: Ritz crackers are my favorite because they’re super flakey and buttery, but Club crackers or Townhouse crackers would be great substitutes here!
- CARAMELS: I like using Kraft baking caramels for recipes like this because they’re convenient and widely available. Kraft caramel bits or Werther’s soft caramels would also work!
- MICROWAVE VS STOVETOP: The caramel, sugar, cinnamon, and heavy cream can be melted in the microwave by microwaving in 30 second intervals to prevent any burning. It can also be melted over low heat on the stove. Completely personal preference!
- WORKING QUICKLY: The caramel pecan mixture cools quickly, so I recommend spooning it onto the crackers immediately! If you find the caramel pecan mixture thickening and cooling too quickly, feel free to return it to the microwave for 30 seconds or so to warm it back up.
- STORING: Let these cookies cool completely before transferring them to an airtight container and storing at room temperature for up to one week. If you store in the fridge, remove from the fridge, and let thaw for a few minutes to soften the caramel before enjoying.

- 18 individually wrapped soft caramels I use Kraft baking caramels
- 1 tbsp brown sugar
- 1/2 tsp cinnamon
- 2 tbsp heavy whipping cream
- 1/2 cup pecans chopped
