Pecan Pie Ritz Cookies
Looking for an easy holiday cookie? My pecan pie ritz cookies have a nutty caramel topping and are the perfect addition to cookie platters!
Servings: 20 cookies
Ingredients
- 20 Ritz crackers
- 18 individually wrapped soft caramels I use Kraft baking caramels
- 1 tbsp brown sugar
- 1/2 tsp cinnamon
- 2 tbsp heavy whipping cream
- 1/2 cup pecans chopped
Instructions
- Line a baking sheet with parchment paper or a silicone baking mat, then lay out the Ritz crackers and set aside.
- In a microwave safe bowl, combine caramels, brown sugar, cinnamon, and heavy whipping cream.
- Microwave in 30 second intervals, stirring in-between, until melted and smooth.
- Fold in chopped pecans, then immediately spoon about 1 tsp of the caramel pecan mixture on top of each cracker.
- Let cool completely before enjoying!
