  • PEANUTS: I like using lightly salted peanuts to offset the sweetness of these cookies, but you can use whatever kind of peanuts you like! I also like to chop them into smaller pieces, but you can also leave them whole if preferred.
  • WORKING QUICKLY: The caramel peanut topping cools quickly, so I recommend spooning it onto the crackers immediately. If you find the topping thickening and cooling too quickly, feel free to return it to the stove for a minute or so to warm it back up.
  • STORING: Let these cookies cool completely before transferring them to an airtight container and storing at room temperature for up to one week. If you store in the fridge, remove from the fridge, and let thaw for a few minutes to soften the topping before enjoying.
