Circus Animal Cookie Bark takes everything people love about classic Oreo truffles and turns it into a fun, colorful cookie bark dessert that’s incredibly easy to make and even easier to devour.

This treat features layers of smooth white chocolate, a creamy circus animal cookie truffle filling, and a festive topping of sprinkles and extra cookies. The result is a rich, sweet, no-bake dessert that tastes like a mix of birthday cake, cookies and cream, and white chocolate fudge!

It’s playful, nostalgic, and perfect for sharing at parties, holidays, or whenever you want a dessert that feels a little extra special.

Ingredients you’ll need:

  • White chocolate chips 
  • Almond extract 
  • Vegetable oil
  • Circus animal cookies 
  • Cream cheese- softened 
  • Rainbow sprinkles 

What makes this dessert especially fun is how it transforms circus animal cookies into something totally new. Those little frosted cookies are already iconic for their sweet vanilla flavor, bright colors, and crunchy texture. When they’re crushed and mixed into the filling, they create a creamy, cookie-packed center that tastes almost like birthday cake batter. It’s sweet, nostalgic, and incredibly satisfying.

The white chocolate layer also adds a smooth richness that pairs perfectly with the cookie filling. When you bite into a piece of this bark, you get the snap of the chocolate, the creamy truffle layer, and little bits of cookie texture throughout. How to make the best Circus Animal Cookie Bark:

  • Line a baking sheet with parchment paper or a silicone baking mat, then set aside.
  • In a microwave safe bowl, combine the white chocolate chips with almond extract and vegetable oil. Microwave in 30 second intervals, stirring in-between, until melted and smooth.
  • Pour half of the melted white chocolate mixture onto your prepared baking sheet and spread into a rectangle that’s roughly 9×13 inches in size. Transfer to the fridge or freezer to harden for about 15 minutes.
  • While the chocolate sets, add the circus animal cookies into the bowl of your food processor and pulse them into fine crumbs. 
  • Pour the cookie crumbs into a medium sized mixing bowl, then add in the softened cream cheese and mix with an electric mixer to form a dough consistency. 
  • Press the cookie mixture on top of the chilled chocolate layer, then evenly spread the remaining melted chocolate on top. 
  • Immediately top with sprinkles and more circus animal cookies (optional), then return to the fridge or freezer to chill for another 15-30 minutes. 
  • Break or cut into pieces before enjoying!

My top tips:

  • LINE YOUR PAN: It’s important to line your baking sheet with parchment paper, wax paper, or a silicone baking mat to prevent any sticking. This is important because it makes breaking up the hardened bark so much easier later on.
  • MELTING CHOCOLATE: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. White chocolate can be especially temperamental and prone to clumping, so it’s important to melt it down slowly.
  • VEGETABLE OIL: Adding a little vegetable oil to the chocolate chips is my secret trick for silky smooth chocolate every time! The vegetable oil thins out the chocolate and makes it much easier to spread. You could also use coconut oil instead.
  • FOOD PROCESSOR: No food processor? No problem! Using a food processor ensures even, fine crumbs, but if you don’t have one, you can put the circus animal cookies in a large resealable bag and crush with a rolling pin, mallet, or something similar. Just be sure that there aren’t any large chunks of cookies left when you’re done.
  • SOFTENED CREAM CHEESE: Softened cream cheese is key in this recipe! It’s super important to make sure your cream cheese is fully softened so that it incorporates into the cookie crumbs easily without any lumps.
  • ELECTRIC MIXER: I find it helpful to use an electric mixer when incorporating the cookie crumbs to ensure they’re combined thoroughly. If you don’t have one, I recommend using clean hands to work the cream cheese mixture into the cookie crumbs.
  • LAYERING: If you’re having a hard time spreading the cookie filling onto the bottom layer of chilled white chocolate, try wetting your hands and pressing the batter down with your fingertips. I find that this gives me more control over where the batter is going.
  • SPRINKLES: The top layer of melted chocolate acts as a glue for the sprinkles and extra cookies to stick to, so it’s important to add the toppings before the chocolate has set.
  • CHILLING: If you’re impatient like me, you’re going to want to place your bark in the freezer to speed up the chill time. I do like storing any leftovers in the fridge though so that the cookie layer stays soft, and the chocolate remains firm and snappy!
  • STORING: Transfer any leftover bark into an airtight container and store in the fridge for up to 1 week.
