Line a baking sheet with parchment paper or a silicone baking mat, then set aside.
In a microwave safe bowl, combine the white chocolate chips with almond extract and vegetable oil. Microwave in 30 second intervals, stirring in-between, until melted and smooth.
Pour half of the melted white chocolate mixture onto your prepared baking sheet and spread into a rectangle that’s roughly 9×13 inches in size. Transfer to the fridge or freezer to harden for about 15 minutes.
While the chocolate sets, add the circus animal cookies into the bowl of your food processor and pulse them into fine crumbs.
Pour the cookie crumbs into a medium sized mixing bowl, then add in the softened cream cheese and mix with an electric mixer to form a dough consistency.
Press the cookie mixture on top of the chilled chocolate layer, then evenly spread the remaining melted chocolate on top.
Immediately top with sprinkles and more circus animal cookies (optional), then return to the fridge or freezer to chill for another 15-30 minutes.
Break or cut into pieces before enjoying!
