Ingredients

  • 3 cups white chocolate chips
  • 1/2 tsp almond extract
  • 2 tbsp vegetable oil
  • 1 (9 oz) bag circus animal cookies plus extra for topping (optional)
  • 4 oz softened cream cheese 1/2 a block
  • 1 tbsp rainbow sprinkles

Instructions

  • Line a baking sheet with parchment paper or a silicone baking mat, then set aside.
  • In a microwave safe bowl, combine the white chocolate chips with almond extract and vegetable oil. Microwave in 30 second intervals, stirring in-between, until melted and smooth.
  • Pour half of the melted white chocolate mixture onto your prepared baking sheet and spread into a rectangle that’s roughly 9×13 inches in size. Transfer to the fridge or freezer to harden for about 15 minutes.
  • While the chocolate sets, add the circus animal cookies into the bowl of your food processor and pulse them into fine crumbs.
  • Pour the cookie crumbs into a medium sized mixing bowl, then add in the softened cream cheese and mix with an electric mixer to form a dough consistency.
  • Press the cookie mixture on top of the chilled chocolate layer, then evenly spread the remaining melted chocolate on top.
  • Immediately top with sprinkles and more circus animal cookies (optional), then return to the fridge or freezer to chill for another 15-30 minutes.
  • Break or cut into pieces before enjoying!
