These Cinnamon Toast Crunch treats have that iconic cinnamon sugar flavor and are loaded with buttery, gooey marshmallows. And the best part? They’re no bake bars so no need to turn on your oven!

These Cinnamon Toast Crunch Bars are a fun variation of the iconic Rice Krispies Treats we all know and love. They’re easy to make with just a few simple ingredients like butter, marshmallows and cinnamon sugar cereal. These homemade treat bars are soft and gooey with the perfect amount of crunch from the cinnamon cereal.

How to make the best cinnamon toast crunch marshmallow treats:

  • Line a 9×13 inch pan with parchment paper, then set aside.
  • In a large pot over medium-low heat, combine butter, mini marshmallows, and vanilla extract, then stir until melted and smooth.
  • Remove from the heat, stir in the Cinnamon Toast Crunch cereal, and transfer to your prepared 9×13 pan. Lightly press into an even layer, then set aside.
  • In a microwave safe bowl, combine white chocolate chips, vegetable oil, and cinnamon. Microwave in 30 second intervals, stirring in-between, until melted and smooth.
  • Evenly drizzle the melted chocolate over the bars, then let set completely before slicing into squares.

Loaded with crunchy cinnamon sugar goodness and a delicious white chocolate and cinnamon drizzle, your whole family is going to go crazy for these homemade treats. Why buy stale store bought bars when you can make your own. Am I right?

My top tips:

  • LINE YOUR PAN: It’s important to line your baking pan with parchment paper or wax paper to prevent any sticking. These bars have a lot of marshmallow in them and are very chewy – if you don’t line your pan they will stick.
  • WORK WITH LOW HEAT: Make sure your heat is set to medium-low when melting down the butter and marshmallows. Doing this step slowly, and stirring continuously, will ensure that nothing burns, and your finished product will be super soft and chewy!
  • PRESSING INTO THE PAN: The cereal mixture is very sticky and can be hard to spread with a spatula. I recommend lightly wetting your fingertips, or a square of parchment paper, and using that to gently press the mixture into the pan to avoid a sticky mess.
  • MELTING CHOCOLATE: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. White chocolate can be especially temperamental and prone to clumping, so it’s important to melt it down slowly.
  • VEGETABLE OIL: Adding a little vegetable oil to the chocolate chips is my secret trick for silky smooth chocolate every time! The vegetable oil thins out the chocolate and makes it much easier to drizzle.
  • DRIZZLING: I find it helpful to transfer the melted white chocolate into a Ziploc bag before cutting off one end and drizzling. This makes the chocolate drizzle more evenly and keeps things mess free.
  • CHILLING: You can let these treats set at room temperature, but it will take hours for the chocolate to fully harden. To speed up the process, feel free to place them in the fridge for 15 minutes to set the chocolate drizzle.
  • STORING: Transfer these treats to an airtight container at room temperature for up to 5 days. They really do stay soft for days! Place a piece of parchment paper in between layers, so they do not stick together. You can also wrap the marshmallow treats tightly in plastic wrap and place them in a freezer safe bag. Freeze for up to 2 months, then thaw to room temperature before serving.

To feed a smaller crowd, feel free to cut these measurements in half and form the bars in a 9×9 baking pan rather than a 9×13!
