My top tips:

  • BROWNIE MIX: You already know I had to throw a shortcut in here somewhere so we’re using a boxed brownie mix to make this recipe even easier! I swear the Ghirahdelli double chocolate brownie mix is just as good (if not better) than any other brownie recipe I’ve tried. If you’d still like to make yours from scratch, just be sure you use a recipe that traditionally fits a 9×9 pan.
  • COOLING: It’s important to let the brownies cool completely before topping them with your chopped strawberries. If you top warm brownies, the brownies will likely absorb the juices from the strawberries and become soggy more quickly..
  • STRAWBERRIES: Only use fresh berries here as frozen strawberries will become too mushy once they thaw. I like chopping my strawberries into small pieces for this, but feel free to make them as small or large as you like. 
  • MELTING CHOCOLATE: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. I also like adding vegetable oil to the chocolate to thin it out a little and make it a better consistency for dipping. You could also use coconut oil for a similar result.
  • DRIZZLING: I find it helpful to transfer the remaining melted chocolate into a Ziploc bag before cutting off one end and drizzling. This makes the chocolate drizzle more evenly and keeps things mess free.
  • CHILLING: If you’re impatient like me, you’re going to want to transfer your Chocolate Covered Strawberry Brownies into the fridge for 30 minutes to make the chocolate set up faster. You can let these set at room temperature, but it will take a few hours for the chocolate to fully set up. These are best enjoyed directly from the fridge, so if I were you, I would just refrigerate until serving.
  • STORING: This is one of those recipes that is best enjoyed day of so that the strawberries don’t become too soft or soggy. I do not recommend storing these for more than 1 day in the fridge.
