- Once crispy, transfer the bacon onto a plate lined with paper towels to soak up any excess grease, then chop the bacon into small pieces and set aside.
- Place the phyllo shells on a baking sheet lined with parchment paper or a silicone baking mat, then drop 1 tsp of goat cheese into each one.
- In a small saucepan over medium heat, combine brown sugar and maple syrup. Stir to melt and dissolve the sugar, then turn off the heat, add in the chopped bacon, and stir to combine.

My top tips:
- COOKING THE BACON: I like cooking my bacon in the oven because it cooks evenly, crisps up nicely, and there’s no splatter to clean up but you can absolutely cook your bacon on the stovetop until crispy too. If you’re in a pinch, you could even skip this step and substitute for 1 (3 oz) bag of bacon bits.
- PHYLLO SHELLS: These flakey little cups are made with layers of phyllo dough and come pre-baked, so all you do is fill, bake to crisp them up, and serve. Phyllo shells can be found in your grocery store’s freezer section, often next to the puff pastry, but phyllo dough is not the same as puff pastry. Usually, there’s 15 to a box and this recipe makes 30, so grab 2 boxes.
- GOAT CHEESE: I love Chevre (goat cheese) and think it’s perfectly paired with the sweet and salty bacon topping, but you can swap it out for brie, feta or even a white cheddar. I opted to use a fig goat cheese here, but you can absolutely use plain goat cheese instead.
- COOLING: Once these bacon and goat cheese cups are baked, you’ll want to let them cool for a few minutes. This allows the brown sugar and maple sauce to absorb into the goat cheese and ensures the phyllo cups stay nice and crispy!
- REHEATING: Transfer any leftovers into an airtight container and store in the fridge for up to 4 days. When you’re ready to reheat, just pop them in the air fryer or oven as needed. You can also use the microwave; just know the exterior won’t be as crispy.
