Ingredients

  • 1 lb bacon cooked and chopped
  • 2 (15 ct) packages frozen store-bought phyllo cups
  • 2 (4 oz) logs fig goat cheese
  • 1/2 cup brown sugar
  • 1/2 cup maple syrup

Instructions

  • Preheat your oven to 425 degrees F. Lay out the strips of bacon on a baking sheet lined with foil, then bake for 20 minutes, flipping halfway through, or until the bacon is golden and crispy.
  • Once crispy, transfer the bacon onto a plate lined with paper towels to soak up any excess grease, then chop the bacon into small pieces and set aside.
  • Place the phyllo shells on a baking sheet lined with parchment paper or a silicone baking mat, then drop 1 tsp of goat cheese into each one.
  • In a small saucepan over medium heat, combine brown sugar and maple syrup. Stir to melt and dissolve the sugar, then turn off the heat, add in the chopped bacon, and stir to combine.
  • Spoon the candied bacon mixture into each phyllo cup, then adjust the oven temperature to 375 degrees F and bake the cups for 10-12 minutes.
  • Let cool for 5 minutes before enjoying!
