  • Butter- softened 
  • Brown sugar

  • Sprinkle in the almond flour and all-purpose flour and mix until smooth. Then fill each pastry cup with 1 tbsp of filling. 
  • Sprinkle a few sliced almonds onto the top of each bite,  then bake for 12-15 minutes, or until the pastry is golden brown.

My top tips:

You want the sheets for this recipe. Either thaw the dough in the refrigerator for several hours or thaw at room temperature for 30-40 minutes and wait to unfold the dough until it is thawed so it doesn’t crack or tear.
  • ELECTRIC MIXER: Using an electric mixer to make the almond filling is optional, but recommended, especially when creaming together the butter and sugar. An electric mixer just whips more air into the mixture and makes it extra smooth and creamy!
  • ALMOND FLOUR: The almond filling (aka frangipane) in these croissant bites calls for almond flour. Almond flour is simply ground blanched almonds. You can also use almond meal which is ground unblanched almonds, just DO NOT substitute for all-purpose flour. 
  • FILLING: A small 1 tbsp sized triggered cookie scoop works great for filling the pastry cups with the almond cream filling. Using a scoop just ensures that each pastry cup has an equal amount of filling. 
  • STORING: Serve these warm or at room temperature. You can transfer any leftovers into an airtight container and refrigerate for up to 4 days or freeze for up to 3 months. To reheat, use an oven or air fryer at around 350 degrees F for 3-5 minutes to crisp them up.
