- 1 sheet store-bought frozen puff pastry thawed
- 1/2 cup butter softened
- 1/2 cup brown sugar
- 1 egg
- 1 tsp almond extract
- 1 cup blanched almond flour
- 2 tbsp all-purpose flour
- 1/4 cup sliced almonds
- 1 tbsp powdered sugar for dusting
Preheat your oven to 400 degrees F and grease a 24 cup mini muffin tin with nonstick spray, then set aside.
Roll out the thawed puff pastry, then cut into 24 squares about 2 inches wide. You may have to trim the sides a little to make the squares even.
Gently place a square of puff pastry into each greased muffin tin cavity, then set aside.
In a medium mixing bowl, cream together the butter and brown sugar. Add in the egg and almond extract, then mix again until combined.
Sprinkle in the almond flour and all-purpose flour and mix until smooth. Then fill each pastry cup with 1 tbsp of filling.
Sprinkle a few sliced almonds onto the top of each bite, then bake for 12-15 minutes, or until the pastry is golden brown.
Dust with powdered sugar before enjoying!
