These easy buckeye graham crackers are absolutely perfect for the chocolate and peanut butter lovers like me! If you like these, you’ll love my buckeye brownie bites too!

If you’re looking for a super simple dessert than look no further than these super chocolatey buckeye graham crackers! Not only are they quite possibly the best food combo ever (hello peanut butter and chocolate) but they’re super quick to make and taste just like your favorite peanut butter cups with a little added crunch!

In my opinion, the contrast of creamy peanut butter on the crunchy graham crackers is what makes these buckeye graham crackers so delicious! One of my favorite snacks is a graham cracker with peanut butter slathered on top, so I figured, why not take it up a notch?!

Ingredients you’ll need:

  • Creamy peanut butter
  • Butter- softened
  • Powdered sugar
  • Graham crackers
  • Semi-sweet chocolate chips
  • Vegetable oil
  • Peanut butter chips

As someone who was born and raised in Ohio, buckeye candies have always been a staple at holidays, bake sales, parties, etc. Buckeyes are peanut butter fudge balls that are partially coated in chocolate. They’re soft, creamy, and similar to peanut butter balls, which are completely covered in chocolate.

Luckily, making these buckeye graham crackers couldn’t be any easier! Peanut butter buckeye filling gets spread onto crunchy graham crackers and coated in a generous layer of chocolate! Finish them off with a drizzle of melted peanut butter chips and you’ll have a delicious treat for any time of year. No oven required!

How to make the best buckeye graham crackers:

  • Break each graham cracker sheet in half so they’re now in squares. Place the graham crackers on a lined baking sheet, then set aside.
  • In a large mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until smooth.
  • Roll the peanut butter mixture into 1-inch sized balls, then place 1 ball onto each graham cracker.
  • Carefully flatten the peanut butter balls onto the surface of each graham cracker, spreading all the way to the edges.
  • In a microwave safe bowl, combine chocolate chips and 3 tbsp vegetable oil. Microwave in 30 second intervals, stirring in-between, until melted and smooth.
  • Coat each graham cracker in the melted chocolate, let any excess chocolate run off, then transfer back to your prepared baking sheet.
  • Once all the graham crackers are covered, combine peanut butter chips and 1 tbsp vegetable oil in another microwave safe bowl and microwave in 30 second intervals, stirring in-between, until melted and smooth.
  • Drizzle the melted peanut butter chips over each chocolate coated graham cracker, then transfer to the fridge to set the chocolate before enjoying.

These buckeye graham crackers are the ultimate no bake treat for when you want a sweet treat but just can’t be bothered to turn your oven on! The combination of sweet and creamy peanut butter filling with the crunchy graham cracker, and smooth outer layer of chocolate is just unmatched. Graham crackers never tasted so good!

Simple, delicious, and easy to throw together! These may look fancy, but they couldn’t be any easier to make! Simple enough to whip up day of or make in advance. Even better, they’re easily portable when you want to share!

My top tips:

  • PEANUT BUTTER MIXTURE: If you have an electric mixer, I recommend bringing it out to combine the peanut butter ball mixture. I find the peanut butter mixture is smoother and comes together much easier this way.
  • PEANUT BUTTER BALLS: The softer the peanut butter mixture is, the easier it’ll be to flatten the peanut butter balls onto each graham cracker. Using softened butter in the peanut butter mixture really helps with this. You’ll also want to use a gentle hand while flattening the peanut butter balls to avoid breaking the graham crackers.
  • VEGETABLE OIL: Adding a little vegetable oil to the chocolate chips is my secret trick for silky smooth chocolate every time! The vegetable oil thins out the chocolate and makes it much easier to coat (and drizzle over) the graham crackers.
  • COATING IN CHOCOLATE: After you coat each graham cracker in chocolate, tap the graham cracker against the bowl so the excess chocolate drips off. You’ll want to scrape the excess chocolate off the bottom of your graham crackers so that it won’t create a pool or “foot” at the bottom as they set.
  • DRIZZLING: I find it helpful to transfer the melted peanut butter chips to a Ziploc bag before cutting off one end and drizzling. This makes the chocolate drizzle more evenly and keeps things mess free.
  • STORING: Once these buckeye graham crackers are fully set, I like storing any leftovers in an airtight container or Ziploc bag in the fridge. This keeps the graham crackers extra crunchy and fresh for up to a week!

    What would be the best option to replace vegetable oil?

      Hi Virginia! I find the best substitutes for vegetable oil are coconut oil or canola oil. Hope you try it out!

      I would definitely use refined coconut oil, not unhealthy seed oils like vegetable or canola. It can be purchased in liquid form that does not solidify and has no coconut flavor. Just a healthier alternative!

      in the directions it says to add 2 to spoons of oil then put in microwave in 30 second intervals stirring each time until melted. Hope this helps.
