No Bake Reese’s Cookies

Loaded with peanut butter, Rice Krispies cereal, and Reese’s peanut butter cups, these no bake Reese’s cookies are perfect for adding to a cookie tray or using up leftover Halloween candy!

Creamy peanut butter is swirled into every bite of these easy, no bake cookies! The addition of Reese’s cups makes this the ultimate treat for peanut butter and chocolate lovers too!

Reese’s krispies are soft and chewy with the prefect amount of sweet and salty. These are some of my favorite treats to make because they never last long at my house!

Ingredients you’ll need:

  • Granulated sugar
  • Corn syrup
  • Creamy peanut butter
  • Rice Krispie cereal
  • Semi-sweet chocolate chips
  • Reese’s peanut butter cups

The smooth and creamy peanut butter mixture that gets tossed with rice krispies makes these Reese’s cookies super chewy and addicting!

Even better, you can eat the batter without any worries of getting salmonella! I’m definitely guilty of scooping the mixture straight out of the bowl and sneak a few “little tastes” before even shaping the cookies!

How to make the best no bake Reese’s cookies:

  • In a saucepan over medium heat, combine granulated sugar, corn syrup, and creamy peanut butter. Stir continuously until the sugar is melted and the mixture is smooth.
  • Add the Rice Krispie cereal to a large mixing bowl, then pour the peanut butter mixture on top and mix to combine.
  • Add in the chocolate chips and chopped Reese’s cups. They will start to melt but that is what you want!
  • Drop scoops of the cookie mixture onto a baking sheet lined with parchment paper or a silicone mat, then shape the scoops into rounds with your hands as needed.
  • Let cool before enjoying!

Every occasion is made better with these no bake Reese’s cookies! Trust me, once you try these no bake Reese’s cookies, you won’t want to eat regular rice Krispie treats ever again!

The classic peanut butter and chocolate combo is always a hit with everyone, and you don’t even have to turn on your oven!

My top tips:

  • PEANUT BUTTER MIXTURE: It’s important to not overcook the peanut butter mixture! This is what keeps these cookies nice and chewy. You’ll want to be sure you’re stirring continuously and only cooking the mixture for a few minutes or just until everything is incorporated and smooth.
  • REESE’S VARIETIES: You can use regular sized or mini Reese’s cups for this recipe. If using regular, I recommend cutting each cup into 6 smaller pieces and if using mini, I recommend cutting each cup into 4 smaller pieces!
  • ADD IN’S: The chocolate and Reese’s cups will start to melt when you mix them into the peanut butter rice krispie mixture but that’s what we want! This way, you’ll have puddles of gooey chocolate and peanut butter melted throughout the cookies.
  • SCOOPING AND SHAPING: I recommend using a triggered cookie scoop to portion out the cookies, then go back in with your hands to press and shape them into rounds. It will get messy from the melted chocolate but that’s completely normal.
  • OPTIONALLY MAKE THESE INTO BARS: If you’d rather serve these like a traditional rice krispie treat, you can spread the cookie mixture into a lined 9×13 pan and slice them into squares once cooled. This saves a little time by skipping the scooping and shaping and will easily feed a crowd!
  • COOLING: It’s important to let the cookies cool completely before serving. Since these cookies are no bake, the cooling process is what allows them to hold their shape without crumbling. You’re just looking for the chocolate and peanut butter to set which will take about 15 minutes.

    Yes, I was wondering if if you could maybe substitute the rice krispies with something else, and if so what would you suggest? My a huge fan of rice krispies but everything else sounds absolutely amazing. Thank you.

      Hi Deb, these can be stored in an airtight container at room temperature for up to 4 days. They can also be refrigerated!
