I love ordering those fancy waffles cones that are dipped in chocolate and rainbow sprinkles at the ice cream shop. These pretzel ice cream sandwich bites get dipped in melted chocolate and topped with rainbow sprinkles for a sweet and salty twist on those fancy waffle cones at home!
Ingredients you’ll need:
- Pretzel snaps
- Ice cream of choice
- Semi-sweet chocolate chips
- Vegetable oil
- Rainbow sprinkles
The possibilities are endless with your choice of ice cream and toppings for these mini-ice cream bites! Rainbow sprinkles are one of my favorite ice cream toppings, but feel free to garnish these bites with chopped nuts, crushed cookies, or mini m&m’s too!
How to make the best ice cream sandwich pretzel bites:
- Start by laying out half of the pretzel snaps onto a baking sheet lined with parchment paper or a silicone mat.
- Add 1 tbsp of ice cream on top of each pretzel, then top the ice cream with another pretzel and gently press down.
- Transfer the ice cream sandwiches to the freezer for 1 hour or until they’re frozen solid.
- Before removing from the freezer, combine chocolate chips and vegetable oil in a microwave safe bowl. Microwave in 30 second intervals, stirring in-between until the chocolate is melted and smooth.
- Working quickly, dip each pretzel sandwich halfway into the melted chocolate, then place back on the lined sheet pan and immediately garnish with sprinkles (or other toppings of choice).
- Place the dipped ice cream sandwiches back in the freezer for 30 minutes to set the chocolate. Serve frozen for best results!
I’ve made these ice cream sandwich pretzel bites with many different ice cream flavors, but cookies and cream, strawberry, and mint chip seem to be some fan favorites!
Since the texture of ice cream can vary between brands, if you’re finding the ice cream is melting too fast when making these, try working in smaller batches of 10 at a time instead!
My top tips:
- As you may assume, the ice cream can melt quickly when assembling these pretzel snap ice cream sandwiches. That’s why I recommend laying out the pretzel snaps before scooping the ice cream onto them. It’s also important to get these back into the freezer to firm up ASAP to prevent melting!
- To ensure your sprinkles (or other toppings) stick to the chocolate, you’ll want to be sure you’re garnishing these pretzel bites immediately after they’ve been dipped in chocolate. The toppings will only adhere to the chocolate before it’s set.
- My favorite way to enjoy these pretzel ice cream sandwich bites is by snacking on them straight from the freezer. They’re perfect for when you just want a little bite of something sweet! Leftovers can be stored in an airtight container and kept in the freezer for up to a month.
