Ice Cream Sandwich Pretzel Bites
Ice cream sandwich pretzel bites are a fun way of enjoying your favorite ice cream sandwiched between two pretzels and dipped in chocolate!

Ingredients
- 60 pretzel snaps
- 1 1/2 cups ice cream any flavor
- 3/4 cup semi-sweet chocolate chips
- 1 tbsp vegetable oil
- 1/4 cup rainbow sprinkles for topping
Instructions
- Start by laying out half of the pretzel snaps onto a baking sheet lined with parchment paper or a silicone mat.
- Add 1 tbsp of ice cream on top of each pretzel, then top the ice cream with another pretzel and gently press down.
- Transfer the ice cream sandwiches to the freezer for 1 hour or until they’re frozen solid.
- Before removing from the freezer, combine chocolate chips and vegetable oil in a microwave safe bowl. Microwave in 30 second intervals, stirring in-between until the chocolate is melted and smooth.
- Working quickly, dip each pretzel sandwich halfway into the melted chocolate, then place back on the lined sheet pan and immediately garnish with sprinkles (or other toppings of choice).
- Place the dipped ice cream sandwiches back in the freezer for 30 minutes to set the chocolate. Serve frozen for best results!
