How to make the best Pecan Pie Brownie Bites:

  • Preheat your oven to 350 degrees F and grease a 24-cup mini muffin tin with non-stick cooking spray.
  • Prepare your brownie batter following the directions on the box, then evenly divide the batter among each greased mini muffin tin cup.
  • Bake for 18-20 minutes, then immediately take the handle of a spatula or tart tamper and press down in the center of each brownie bite to create a well. Set aside to cool.
  • In a medium saucepan combine butter, brown sugar, heavy cream and honey. Bring the mixture to a simmer over medium-low heat and simmer for 5 minutes, stirring constantly. 
  • Remove from the heat and stir in the vanilla and chopped pecans. Set aside for 15 minutes to cool slightly. It should thicken up just a bit but still be pourable.
  • Fill each brownie bite with the pecan topping, then let cool completely!

My top tips:

  • BROWNIE MIX: You already know I had to throw a shortcut in here somewhere so we’re using a boxed brownie mix to make this recipe even easier! I swear the Ghirahdelli double chocolate brownie mix is just as good (if not better) than any other brownie recipe I’ve tried. If you’d still like to make yours from scratch, just be sure you use a recipe that traditionally fits a 9×9 pan.
  • GREASE YOUR PAN: Make sure you grease your mini muffin tin generously with non-stick cooking spray before adding the brownie batter. It’s no fun to make a dessert just for it to get stuck in the pan!
  • CREATING THE WELLS: You’ll want to press down the centers of each brownie bite while the brownies are still warm from the oven. I just used the rounded end of a spatula handle I had, but if you own a tart tamper, that would be even more efficient.
  • PECANS: You’ll want to use pecan bits or just chop the pecans into small pieces yourself. The smaller pecan pieces fit better inside the brownie cups. I’d recommend using walnuts if you don’t like pecans. They’re similar in both texture and taste.
  • PECAN TOPPING: Avoid cooking the pecan topping for too long. Simmering the topping for 5 minutes before letting it cool is what gives the topping a perfectly chewy texture. It’s also important to stir this mixture continuously to prevent any burning.
  • COOLING: I recommend letting these brownie bites set at room temperature. If your house is warm, refrigerating can help the topping firm up, but I wouldn’t store them long-term in the refrigerator, as the topping might become too hard.
  • REMOVING FROM THE PAN: I don’t recommend removing these brownie bites from the muffin tin until the brownies are fully cooled. If the edges of the brownies seem to be stuck to the pan, you can run a butter knife around the edges to loosen each cup.
  • STORING: Transfer any leftovers into an airtight container and store at room temperature for up to 4 days.
