Turtle Dipped Marshmallows are inspired by classic turtle candies, which combine caramel, chocolate, and pecans. Instead of a traditional candy base, this version uses marshmallows as the core, making them soft, chewy, and ultra-satisfying!

  • In a microwave safe bowl, combine caramel bits and heavy whipping cream. Microwave in 30 second intervals, stirring in-between until the caramel is melted and smooth.
  • Dip each marshmallow into the melted caramel, let any excess drip off, then return to the prepared baking sheet and transfer to the fridge for 30 minutes to set the caramel. 
  • In another microwave safe bowl, combine chocolate chips and vegetable oil. Microwave in 30 second intervals, stirring in-between until the chocolate is melted and smooth.
  • Pour the chopped pecans into a small, shallow bowl, then dip each caramel coated marshmallow into the melted chocolate, let the excess drip off, then roll directly into the chopped pecans. 
  • Return to the prepared baking sheet and transfer to the fridge for 30 minutes to set the chocolate. 
  • Remove all toothpicks before enjoying!

My top tips:

  • LINE YOUR SHEET PAN: Be sure you’re lining your baking sheet with parchment paper or a silicone mat to prevent any sticking. Skip this step, and you’ll have a sticky caramel mess on your hands!
  • TOOTHPICKS: If you don’t have toothpicks, you can also insert skewers or lollipop sticks into the marshmallows. You’ll just want something that will act as a handle while dipping the marshmallows.
  • CARAMEL BITS: I like using Kraft caramel bits because they’re convenient and don’t require you to unwrap individual caramels. If you can’t find caramel bits, you can use 2 cups of soft baking caramels such as Kraft classic candy caramels or Werther’s soft caramels instead.
  • KEEPING THE CARAMEL WARM: If you find that the caramel is becoming too firm to continue dipping the marshmallows, pop it back in the microwave for 30 seconds, give it a quick stir, and it should loosen back up for you to continue dipping.
  • MELTING CHOCOLATE: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. I also like adding vegetable oil to the chocolate to thin it out a little and make it a better consistency for coating. You could use coconut oil for a similar result.
  • COATING: After you coat each marshmallow, tap it against the bowl so the excess chocolate drips off. You’ll also want to scrape all the excess chocolate off the bottom so that it won’t create a pool or “foot” of chocolate once placed onto the baking sheet.
  • STORING: Transfer any leftovers in an airtight container and store in a cool, dry place at room temperature. They will stay fresh for up to 1 week!
